We used to eat mayonnaise-covered chicken with a side of celery and green onions, but we now realize that mayonnaise, while tasty, may not be the finest foundation for a meal.

In this simple recipe, avocado, Greek yogurt, and light ranch dressing serve as the mayonnaise’s delectable replacement.

Any ranch dressing will do, but because I always have a batch of my light Buttermilk Ranch dressing in the refrigerator, I used homemade ranch dressing.

I prefer to wrap them in thin Flat-out flatbread since they have only 90 calories per piece and are rich in protein and fiber, keeping with the theme of a lightened-up chicken salad (keeping my belly happy and full).

I then add my preferred vegetables, such as lettuce and tomatoes. but I’ve also included thinly sliced cucumbers, red onion, alfalfa sprouts, and carrots that have been shredded.

Wrap it with flatbread (or lettuce)

I’ve been eating a lot of meals on the low-calorie Flatout flatbread because you can stuff them with everything from cream cheese and vegetables to turkey taco meat.

They taste fantastic baked into a low-calorie cracker to go with your favorite lunch dish or as a snack. They also taste great spritzed with olive oil, dusted with garlic salt, and baked.

For leftover chicken, it’s ideal

Ingredients

  • 4 light Flatout flatbreads
  • 1 avocado peeled & pitted
  • ½ tablespoon lemon juice
  • ⅓ cup fat-free Greek yogurt
  • ⅓ cup light ranch dressing bottled or homemade
  • 1 tablespoon fresh dill
  • 1 tablespoon fresh parsley
  • salt & pepper to taste
  • 2 cups cooked chicken
  • 1 cup diced celery

  1. In a bowl, combine the avocado and lemon juice. When almost smooth, mash (a few little chunks are ok).
  2. Add the yogurt, dressing, parsley, dill, salt, and pepper. Mix in the chicken and celery.
  3. One light Flatout flatbread should be placed on your surface. If using, add lettuce and tomato on top. Add the chicken mixture and tightly roll. Cut in half, then present.
