Ingredients
The base of this dish is ground beef, although any ground meat will work. Also delicious are meatballs or rotisserie chicken.
SAUCE: Cream of mushroom soup, gravy mix, or tomato soup can be used to make a dinner that is more reminiscent of Shepherd’s Pie. If you like, you can use homemade condensed Cream of Mushroom Soup.
VEGETABLES: I prefer to use fresh vegetables (as well as frozen corn), but either will work in this recipe. You can also utilize any leftover vegetables you may have.
Variations include adding chopped country ham, ground breakfast sausage, or bacon bits to a breakfast casserole.
Condensed tomato soup or even gravy (or bottled gravy) can be used in place of canned soups.
Tater Tot Casserole Recipe

- Cook onion and ground meat.

Tater Tots Casserole

Ingredients
- 1 bag of tater tots
- 1 pound of ground beef
- 2 cups frozen or fresh vegetables diced
- 1 onion diced
- 1 can mushroom soup
- ⅓ cup milk
- ¼ teaspoon oregano
- ¼ teaspoon dried parsley
- salt and pepper to taste
- 2 cups cheddar cheese shredded, divided
Instructions
- Turn on the 375°F oven.
- Over medium heat, cook ground beef and onion until no pink is visible. Remove any fat.
- The vegetables, soup, milk, seasonings, beef combination, and 1/2 cup shredded cheese should all be combined in a bowl before being distributed into a casserole dish. Top with the remaining cheese.
- Once the sauce is bubbling and the tots are golden brown, top with tater tots and bake for 40 to 50 minutes.
Notes
If you’re using fresh vegetables, like carrots and celery, you should steam them or cook them in the frying pan with the beef until they’re soft.
Vegetables that are frozen need to be thawed first or the dish will require more cooking time. You can include any variant or combination of vegetables.
Other “cream of” soups, such as tomato soup or gravy, can be used in place of canned mushroom soup.
This recipe can be prepared in any size casserole dish. It could take a little longer to cook a deeper dish.
This casserole can be prepared in advance and stored in the refrigerator. It will take longer to bake if it is cooled from the refrigerator.
