Having a chicken Caesar salad for lunch or dinner is a simple classic. With a fast caesar dressing, juicy chicken breasts with seasoning are served over a fresh salad.

This salad is the ideal portion size for a dinner and is flavorful. Garlic toast is recommended.

A Filling Salad

  • Pre-washed lettuce saves time.
  • If preferred, you can substitute rotisserie or grilled chicken for the seasoning chicken in the recipe below.

CHICKEN In this recipe, fresh chicken breasts are pan-fried. We use our handmade cajun seasoning to season.

ROMAINE Loads of romaine lettuce that is crisp and fresh, handmade croutons, and Parmesan cheese are typical. Of course, kale also tastes fantastic in a Caesar salad. Although it’s uncommon, I occasionally add fresh mushrooms to this salad!

DRESSING Use your preferred Caesar dressing; I kept it straightforward with a quick dressing. Little preparation and lots of taste.

ADDITIONS I heap on the croutons (really my fave part of a salad). Bacon or bacon bits, as well as crispy capers that have been pan-fried in a little olive oil, are excellent additions. Jammed eggs or even grilled shrimp (easy to make in the air fryer).

Chicken Caesar Salad Recipe

  1. Chicken should be seasoned, pan-fried as directed in the recipe below, and then baked.
  2. Mix the ingredients for the dressing in a small bowl.
  3. Cut up the romaine and add chicken, croutons, and Parmesan cheese. Mix and serve!

Tips & Tricks

  • Instead of baking chicken, you can grill it; simply arrange seasoned breasts on a medium-hot grill and cook them for about 12 minutes on each side.
  • A chicken Caesar salad is best put together just before it is served. This guarantees that the chicken will remain juicy and moist while the lettuce will be at its crispiest. Before adding the chicken to the lettuce, make sure it has cooled.
  • WASH THE LEAF, MIX THE DRESSING, AND MEASURE THE OTHER INGREDIENTS TO BE MADE AHEAD.

Ingredients

  • 4 chicken breasts
  • 2 tablespoons olive oil divided
  • 2 tablespoons cajun seasoning* or to taste
  • 8 cups romaine lettuce washed, dried
  • 1 ½ cups croutons
  • ¾ cup parmesan cheese grated

dressing

  • 1 cup mayonnaise
  • ¼ cup parmesan cheese grated
  • 3 tablespoons lemon juice
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons dijon mustard
  • 1 tablespoon anchovy paste
  • 2 cloves garlic minced

  1. All dressing components should be combined and set aside.
  2. 1 tablespoon of olive oil and the chicken breasts should be combined in a small bowl. Make sure to coat the entire piece of chicken with the cajun seasoning.
  3. Once hot, add the chicken to the large pan with the remaining olive oil and cook it on both sides until it has “blackened” or developed a dark crust.
  4. Cook the chicken until the internal temperature reaches 165°F or finish them in the oven.
  5. Slice the chicken breasts after they have cooled.
  6. Cut the romaine lettuce into bite-sized pieces and place it in a big basin. Add the cooked chicken, parmesan cheese, and croutons. Add dressing on top, then toss.

Notes

Cajun seasoning produced at home contains a lot less salt than pre-made versions. When buying seasoning, taste it first to see how salty it is. If necessary, use a little less salt than is called for in the recipe.
