This insanely simple chicken mushroom casserole is the ideal weeknight supper! With tons of parmesan and garlic taste, this casserole recipe combines chicken, rice, beans, mushrooms, and more!
How to Prepare Chicken Mushroom Rice Casserole
Chicken Mushroom Casserole is made extra simple peasy using Zatarain’s® Parmesan Garlic Brown Rice with White Beans.
Garlic and parmesan provide plenty of flavor to this rice mixture, and the white beans give it a wonderful texture. There is no need to cook the rice in advance because everything bakes up quickly in the oven.
With 9 grams of protein and 11 grams of fiber, this rice blend also makes a quick side dish that cooks in just 10 minutes. wholesome and hearty!
- Chicken is seasoned and browned (per the recipe below).
- Till soft, cook the onions and mushrooms.
- In a dish, combine all the ingredients, then bake. So simple!
Before serving, give the rice some time to rest so it can absorb any liquid. Add some parmesan cheese and fresh herbs (such as basil or parsley) as a garnish.
Variations
- Chicken: I use chicken breasts; if you like, you may use chicken thighs. It also works with leftover roast chicken or rotisserie chicken (or leftover turkey)! (This rice is also a fantastic ingredient in chicken skillet recipes.)
- Mushrooms: Are there none? No issue! Add some leftover roasted vegetables or perhaps some broccoli or zucchini to a stir fry!
- Seasonings: I adore how this recipe uses Italian seasoning. Or, since our Zatarains® mixture is so flavorful, omit the extra seasoning.
- Cheese or a bread crumb topping goes well with this dish as a topper. Add a few handfuls of shredded mozzarella or even provolone after the foil is taken off.
Serving Ideas
Nothing compliments a casserole like a fresh, green salad and perhaps some handmade garlic bread! A side of roasted green beans or a mix of steamed vegetables like broccoli and cauliflower nicely round out the dinner for a heartier option!

Mushroom and Chicken Casserole

Ingredients
- 2 tablespoons olive oil divided
- 8 ounces chicken breasts cut into bite-sized pieces
- ½ small onion diced
- 8 ounces of mushrooms sliced
- ½ teaspoon Italian seasoning
- 1 package Zatarain’s® Parmesan Garlic Brown Rice with White Beans
- 1 ½ cups boiling water
- parsley and parmesan cheese for garnish
Instructions
- Turn on the 375°F oven. Make a 2QT casserole dish greased.
- Add salt, pepper, and Italian spice to taste when preparing chicken. 1 tablespoon of olive oil, cooked chicken, until just browned (it does not need to be cooked through). Withdraw from heat and incorporate into casserole.
- In the same pan, heat the remaining oil. Add the onions and simmer for 2 to 3 minutes, or until tender. Cook the mushrooms for 4 minutes or until they are soft.
- Combine the mushrooms in a chicken mushroom casserole with the other ingredients (except garnish). Stir, then firmly cover with foil or a lid. Rice should be soft after 35 minutes of baking. After 5 more minutes of baking, remove the foil.
- 5 minutes of rest. Stir, add garnish, then plate.
Notes
Cheese is a terrific addition to the chicken mushroom casserole. Add a few handfuls of shredded mozzarella or even provolone after the foil is taken off.
