Bacon – This recipe works with any type of bacon! To make things a little healthier, I prefer sugar-free bacon, but feel free to use your favorite. Simply chop the bacon into 1/2-inch pieces before frying for this recipe.
Apple Cider Vinegar — No salad dressing would be complete without a dash of vinegar. In this dish, apple cider vinegar’s mild sweetness and fruity flavor complement each other well. If you don’t have apple cider vinegar, white wine vinegar can be substituted.
Maple Syrup — A bit of sweetness in this hot bacon dressing helps to balance out the flavors. If you don’t have maple syrup on hand, honey will suffice. You could also use 2 tablespoons of white sugar instead of the syrup if you like.

- 8 slices bacon
- 2 tablespoons apple cider vinegar
- 1 small shallot chopped
- 2 teaspoons maple syrup see Notes
- 1 teaspoon Dijon mustard
- ¼ teaspoon salt
- ¼ teaspoon black pepper

Instructions
- In a skillet over medium heat, cook bacon for 8-10 minutes.
- Place the shallots and 14 cups of rendered bacon fat in a small saucepan over medium heat. Cook until shallots are tender, about 2-3 minutes.
- Reduce the heat to low and whisk together the apple cider vinegar, maple syrup, Dijon mustard, salt, and black pepper. Chop the bacon and place it in the pot. Allow thickening for 1-2 minutes. Serve hot.
