  1. Lay the bacon out on a cooling rack that is atop a foil-lined baking sheet.
  2. Sprinkle liberally with brown sugar and, if desired, season with freshly cracked black pepper. Add some additional cracked pepper or a pinch of chili peppers if you prefer your bacon spicy.
  3. Bake until the center is caramelized and the edges are crunchy.
  4. Before moving it to a serving platter to finish cooling, give it time to chill for two to three minutes.

After cooling, the bacon will become even crisper.

Advice on How to Make Candied Bacon

  • Bacon – For this dish, thick-sliced bacon works best, but because not all slices are cut equally, you might need to alter the cooking time. Thinly sliced bacon will burn before the sugar’s ability to caramelize.

  1. Turn on the 375°F oven.
  2. On a baking sheet covered with foil, place a wire rack. Sprinkle the black pepper over the bacon before placing it on the wire rack. Put a thin layer of brown sugar on top of the bacon by lightly patting it on.
  3. Bake the baking sheet in the oven for 25 minutes, or until the bacon is crisp and the brown sugar has melted.
  4. Take the food out of the oven and let it cool for ten minutes. The bacon should be moved with tongs to a baking sheet covered with parchment paper so it may cool to room temperature.
  5. For up to three days at room temperature, store in an airtight container.
