This recipe for delicious mushroom stuffed chicken breast is simple to prepare and is usually a hit! The inside is juicy and tender, and the skin is beautifully crispy.
The filling is fantastic. This meal is elegant enough to offer to guests while still being simple enough for a family dinner on a weekday!
You may use any kind of mushroom in this dish mushroom stuffed chicken breast, but I like brown mushrooms since they have a deeper taste.
Use chicken breasts with or without bones! If there is any filling left over after stuffing the chicken, simply peel the skin and add it. For perfectly cooked chicken, I always use an instant-read thermometer.

Ingredients for Mushroom stuffed chicken breast
- 1 ½ pounds boneless skinless chicken breasts about four 6-oz chicken breasts
- ½ teaspoon each paprika & garlic powder
- 1 tablespoon butter
mushroom filling
- 3 tablespoons white onion minced
- 6 ounces brown or white mushrooms thinly sliced
- 1 clove garlic minced
- ¼ teaspoon thyme
- 3 tablespoons spreadable herb & garlic cream cheese
- 2 ounces mozzarella cheese shredded
- salt & pepper to taste
Instructions for making Mushroom stuffed chicken breast
- Set the oven to 400 °F.
- In a pan over medium heat, add butter. Garlic and onion should be added and cooked until just softened.
- When the juices from the mushrooms have released and been absorbed, add them. Add thyme and wine.
- Cook until the liquid has evaporated but is still moist. Complete cooling.
- Add the thyme, garlic, and mushrooms. Cook for as long as it takes for juices to release and absorb. Complete cooling.
- Mushrooms that have been cooled down should be combined with cream cheese, mozzarella cheese, salt, and pepper.
- Cut a 1 1/2′′ slit in the side of the bird with a sharp knife. Make a pocket by moving the knife around. 1/4 of the mushroom mixture should be put into the pocket. the remaining chicken breasts, and so forth.
- Mushroom stuffed chicken breast should be placed on a baking sheet lined with foil, salt, and pepper to taste, and bake for 30-35 minutes (165°F).
Notes
How to Use Bone-In Split Chicken Breasts:
- Cut a 1 1/2′′ slit in the side of the chicken breast with a sharp knife.
- Make a pocket by moving the knife around. 1/4 of the mushroom mixture should be put into the pocket. the remaining chicken breasts, and so forth.
- Cook the chicken breasts in the skillet for two to three minutes on each side, following the directions above. Bake the skillet for 30-35 minutes until it reaches 165°F.
- 5 minutes should pass before serving.
