There’s no need to thaw the chicken thighs for this Instant Pot recipe, which results in incredibly moist and tender chicken with (really!) crispy, delicious skin.

Important Ingredients

Thighs of chicken – Although many individuals avoid dark flesh chicken, I personally enjoy chicken thighs.

They’re juicy and flavorful, especially if you use bone-in thighs (which we do! ), and they’re a little richer in nutrients than chicken breasts. They’re also a touch fattier than chicken breasts, making them ideal for anyone on a keto diet!

Chicken Broth — Because this method steams the chicken thighs, you’ll need a liquid to make it work. For extra taste, I like to use chicken broth, but you can use water instead.

If you’re using a 6-quart Instant Pot, make sure to use at least 1 cup of whatever liquid you pick. 1.5 cups of liquid are required for an 8-quart Instant Pot.

Chef’s Advice For Frozen Chicken Thighs

  • This recipe calls for frozen bone-in, skin-on chicken thighs, but boneless thighs can also be used. All you have to do now is alter the cook time. After broiling, use a thermometer to check the temperature of the chicken, aiming for a minimum of 165° Fahrenheit for food safety.
  • More than 4 chicken thighs to cook? It’s fine if they don’t all fit in a single layer. In the Instant Pot, you may stack the chicken thighs without worrying about them cooking unevenly. The cooking times will not change.
  • Instead of chicken broth, add pineapple or apple juice in the bottom of the Instant Pot for a distinct flavor. You may also flavor the broth with some minced garlic or onion!

These chicken thighs are soft, juicy, and very tasty with crispy skin when cooked in the Instant Pot with just a few ingredients.

Ingredients For Frozen Chicken Thighs

  • salt and pepper to taste
  • 4 frozen chicken thighs bone in, skin on, see Notes for boneless
  • 1 cup chicken broth see Notes

Instructions

  1. Season frozen chicken thighs with salt & pepper. Fill the Instant Pot halfway with broth, then place the trivet inside. On a trivet, place seasoned chicken thighs.
  2. Seal and cook for 13 minutes under high pressure. If using boneless chicken thighs, see the notes. Preheat the broiler while the chicken is in the Instant Pot.
  3. Allow 5-10 minutes for the pressure to naturally release. Pat the chicken thighs dry on a baking sheet. If desired, season with extra salt or spice.
  4. Place chicken thighs 10 to 12 inches from the heat under the broiler. 5-10 minutes under the broiler, or until golden brown. Note that skipping this step may result in undercooked chicken thighs. This is a crucial component in the formula.

Notes

  • Boneless Thighs: In the Instant Pot, cook boneless thighs for 8 minutes on High Manual Pressure.
  • Chicken broth: 1 cup is plenty for a 6-quart Instant Pot. Use 1.5 cups broth for an 8-quart Instant Pot.

Cooked chicken should attain a minimum internal temperature of 165° Fahrenheit for food safety concerns.

Your chicken may be undercooked if you miss the broiling stage in this recipe. Cooking times will vary depending on the size of the chicken thighs used.
