I crave it whenever I’m ill or recovering from a stomach ailment, and it was all I wanted for a couple of weeks during my first trimester this time. We don’t dine there very often, but every now and then I’ll go out of my way to get something for a sister.

The trouble is that I have no idea what’s in that iced lemonade.

And, hey, things could be a lot worse! It’s nearly usually the case with fast and processed foods, but 63 grams of sugar, “artificial flavor,” and carrageenan? Pass.

Instead of just getting over my perma-craving, I decided I had to make a dairy-free, refined-sugar-free, and guilt-free paleo and vegan frosted lemonade recipe.

Only a few ingredients went into it: unsweetened almond yogurt and coconut cream, fresh lemon juice, honey (or maple syrup for vegans), and a dash of vanilla flavor. And, of course, plenty of ice.

We lamented the impending demise of the healthy frosted lemonade batch I’d made, knowing that we shouldn’t make another batch, but what would our lives be like without them?

The nicest aspect is that I don’t mind giving wine to my toddler or having a glass when pregnant.

This nutritious frosted lemonade recipe is packed with nutritional ingredients including vitamin C-rich citrus, probiotic-rich yogurt, healthy-fat-heavy coconut cream, and that powerhouse: raw local honey.

Of course, if you’re vegan, maple syrup is a terrific substitute: it’s delicious and packed with vitamins and minerals.

This recipe is good for you. A frosted lemonade is also simple to make: I mixed the liquids together and refrigerated them for a few minutes.

Then, in my blender, I crushed ice and put in the lemonade liquid before blending everything together one last time. So easy! You can even skip the chilling stage entirely if your refrigerator produces crushed ice. See? Life is evolving.

How to Prepare Frosted Lemonade

  1. In a high-powered blender, combine all ingredients except the ice. Pulse until everything is well blended, then transfer to a container. If desired, chill to make an even frostier version of this healthy Chick Fil A recipe. Lemonade with ice!
  2. In your blender, pulse the ice until it is very fine, almost like a snocone. But don’t overthink it! You don’t want it to revert to water.
  3. Pulse the chilled lemonade mixture a few times until it is thick and icy. Serve right away.

Variations

  • For a frosted pink lemonade delight, add a handful of raspberries or strawberries.
  • For a Creamsicle-inspired beverage, replace the lemon juice with orange juice and reduce the honey or sweetener slightly.

This zesty, creamy, and delightfully sweet frosted lemonade recipe is healthy and delicious. This guilt-free chilly summer delight is dairy-free and has no processed sweeteners. Easy, too!

Ingredients

  • 1/3 cup fresh-squeezed lemon juice
  • 1/4 cup + 3 Tbsp raw honey or maple syrup for vegan
  • 1/2 cup almond yogurt-like Kite Hill
  • 1/2 cup coconut cream just the solid white part of a can of coconut milk or coconut cream
  • 1 tsp. vanilla extract
  • 3 cups ice preferably crushed

Instructions

  1. Except for the ice, combine all ingredients in a blender. If your beverage is at all heated, refrigerate it first before proceeding.
  2. If your ice isn’t crushed, add it to your blender and process a few times until crushed and all large parts are broken down just before serving. Pulse in the cooled lemon mixture until it is smooth and blended.

Notes

  • Scrape into two glasses for serving.
