In the grocery store or online, you can find alphabet pasta with the other varieties of spaghetti. Use orzo or another type of tiny pasta if you can’t find them.

VEGETABLES: A can of tomatoes, some potatoes, and sautéed carrots, onions, and celery are added to the broth. Use frozen vegetables for convenience.

SEASONINGS: The right flavor combination is created by combining the pasta, vegetables, and broth with garlic, Italian seasoning, salt, and pepper.

Variations

You may easily add extra meat, vegetables, or miniature meatballs to this soup. Add some parmesan cheese as well as a bag of frozen vegetable medley.

Making Alphabet Soup: A Recipe

Leftovers

Ingredients

  • 1 carrot sliced
  • 1 stalk celery sliced
  • ½ onion diced
  • 2 cloves garlic minced
  • 5 cups beef broth reduced sodium
  • 1 cup water
  • 14 ounces diced tomatoes with juices
  • 1 potato diced
  • 2 tablespoons tomato paste
  • 1 teaspoon Italian seasoning
  • salt and pepper to taste
  • 1 cup alphabet noodles uncooked

  1. Carrots, celery, onion, and garlic should be sauteed in a big saucepan over medium heat until the onion starts to soften.
  2. Add the seasonings, tomato paste, tomato broth, water, potato, and tomatoes. After bringing to a boil, reduce heat and simmer for 15 minutes.
  3. When the noodles are al dente, add the alphabet noodles and cook for an additional 7-8 minutes.

Notes

  • Frozen vegetables can be swapped out for fresh ones.
  • You can include cooked ground beef, shredded chicken, or little meatballs.
