Even though the ingredient list appears large, making this beef and barley soup is very simple.

I begin by briefly sautéing the garlic and onions.

Simply add the remaining ingredients to the pot and cook for the desired tenderness.

Beef must be cooked for this dish. For this beef barley soup, you can use leftover pot roast, leftover steak, or leftover roast beef.

You can make your own beef if you don’t have some already cooked. I either use cubed chuck or flank steak that has been cut against the grain.

In this recipe for barley soup, a cooked hamburger can be swapped out if you’d prefer. You should brown the beef with the onions and then drain any excess fat if you’re making ground beef and barley soup.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 carrots sliced
  • 1 garlic clove minced
  • 1 stalk celery sliced
  • 2 cups cooked beef
  • 6 cups reduced-sodium beef broth
  • 1 can petite diced tomatoes 14-15 oz, undrained
  • ½ green pepper diced
  • ⅔ cup barley
  • 1 tablespoon Worcestershire sauce
  • ¼ teaspoon dried thyme
  • 1 package beef gravy mix
  • 1 bay leaf
  • 2 tablespoons red wine optional
  • 2 tablespoons fresh parsley or 2 teaspoons dried
  • salt & pepper to taste

Instructions

  1. Onions and garlic should be softened in oil over medium heat.
  2. Bring the remaining ingredients to a boil before adding. Reduce heat, cover, and simmer barley for 40 to 50 minutes, or until it is tender.
  3. Bay leaf removed, then dish up.

Notes

When soup cools, it may thicken; to achieve the appropriate consistency, add more broth (or water).
