BROCCOLI: The star of the show is broccoli! Pick florets that are unscented, dry, and bright green. Buy pre-shredded carrots or use a cheese grater to quickly shred them.

FRUIT:

  • Grapes: Purple grapes add some color and flavor to this salad, but green grapes also work well. Before including them in the salad, cut the grapes in half.
  • Apples: Red and yellow apples are softer and sweeter than green apples, which will make the salad somewhat sourer.

Additionally, diced or crisp bacon is excellent. (While preparing the other ingredients, I frequently cook bacon in the air fryer)

The dressing is incredibly simple and tangy fantastic (and great on coleslaw too).

Sunflower seeds can be gently sautéed in a dry skillet until just slightly aromatic for added crunch. This increases their flavor and makes them extra crispy.

The enjoyable part is now! Change the raisins for dried cranberries, replace the carrots with a bag of coleslaw, use half broccoli and half cauliflower, and add a few small pieces of shredded kale.

Increase the salad’s size (particularly for a crowd) by doubling the dressing and turning it into a broccoli pasta salad by including noodles.

Ingredients

salad

  • 1 head broccoli
  • ½ cup purple grapes sliced in half
  • 1 large apple of any variety, diced
  • ¼ cup red onion diced
  • ⅓ cup carrots shredded or julienned
  • ¼ cup bacon bits divided
  • ¼ cup golden raisins
  • 3 tablespoons sunflower seeds

dressing

  • ¾ cup mayonnaise
  • ¼ cup plain yogurt
  • 3 tablespoons sugar
  • 2 tablespoons white vinegar

  1. For garnish, set aside 1 tablespoon of bacon bits.
  2. Mix the remaining bacon with the salad’s other ingredients in a big bowl.
  3. Toss the salad ingredients together after combining all the dressing ingredients in a small bowl.
  4. Serve with garnished bacon bits that have been set aside and chilled for at least one hour.

Notes

To allow the flavors to meld, it is best to prepare this salad ahead of time.

Bacon from the oven or air fryer can be crumbled and used in place of the bacon bits.

Plain yogurt can be swapped out for Greek or sour cream.
