  • I’m not against cooking cabbage on the burner, but there are occasions when you want something a little more hands-off. Cabbage in an Instant Pot! It doesn’t get any easier than this for buttery cabbage. Simply put everything in the Instant Pot, press a few buttons, and you’ll have a wonderfully cooked side dish in under 15 minutes!
  • Cabbage is a nutrient-dense vegetable. It’s high in vitamin A, iron, magnesium, potassium, and folate, as well as fiber and antioxidants, which can protect your body from free radical damage. Please include me in your plans.

Cabbage – It’s impossible to create Instant Pot cabbage without cabbage! Feel free to use red or green cabbage to add some color to your plate.

If you don’t need a whole head of buttery cabbage for this recipe, halve or quarter it, cook what you need, and store the rest for another time.

Chef’s Advice

  • You can easily double this cabbage recipe if your Instant Pot is large enough. Just be careful not to overfill the Instant Pot! If you double the ingredients, you won’t need to adjust the cooking time.
  • I used only kosher salt and freshly ground black pepper for seasoning. If you wish to add more spices, go ahead! Thyme, oregano, and garlic powder are all excellent choices

Ingredients

  • 1 medium head cabbage roughly chopped, approximately 6 to 8 cups raw
  • 1 small onion diced
  • ¼ cup cold, unsalted butter sliced, see Notes
  • 1 teaspoon kosher salt plus more to taste
  • ½ teaspoon freshly ground black pepper plus more to taste
  • ¾ cup chicken broth or vegetable broth

Instructions For Buttery Cabbage

  1. In the Instant Pot, combine the cabbage and onion, coarsely chopped.
  2. Pour in the chicken broth after adding chilled butter, kosher salt, and freshly ground black pepper. Stir once or twice more, then place the Instant Pot cover on the pot with the vent in the Sealing setting.
  3. Set the Instant Pot to high pressure for 7 minutes on manual. Allow 5–10 minutes for the Instant Pot to come to pressure before starting the cooking process. When the 7-minute cook time is over, quickly release the pressure and remove the lid.
  4. Stir the cabbage mixture once more. Remove cabbage from the pot using a slotted spoon and season with kosher salt and black pepper, if preferred. Serve immediately.

Notes

  • Use plant-based butter to make it dairy-free.
  • Use veggie broth instead of chicken stock to make it vegetarian.
  • To make it vegan: Use a plant-based butter and vegetable broth instead of chicken stock.
  • Use ghee instead of butter and a Paleo-friendly broth to make it Whole30/Paleo-friendly.
  • A 6-quart Instant Pot was used to test and perfect this recipe.
