Get creative with this recipe; it lends itself to a lot of modifications.

  • Not any fresh basil? In a pinch, pesto sauce in a jar will do!
  • Are cherry tomatoes absent? Diced tomatoes or sun-dried tomatoes can be substituted.
  • No chicken breasts without bones? Chicken thighs, bone-in chicken breasts, and chicken drumsticks can also be used in this dish. Just remember to check your cooking times and make any required adjustments.

Use a meat thermometer to check that the chicken has reached an internal temperature of 165°F to determine whether it is thoroughly done.

Simple to Make

Putting together this delicious dinner is as simple as 1, 2, 3.

  1. Cook, crumble, and set aside bacon. Once the chicken has been seared and sautéed in bacon fat, remove it from the pan (per the recipe below).
  2. Cook the chicken and tomatoes with the sauce components after whisking them together in the pan.
  3. Cover with mozzarella cheese, then broil until bubbling and melted.

Before serving, top with fresh basil!

Roll up a few basil leaves on top of one another, cut the roll into strips, and serve. Chiffonade is a method that gives any entrée an added touch of elegance.

Serving Ideas

Ingredients

  • 2 slices bacon
  • 1 ½ pounds chicken breasts boneless-skinless, about 5 oz each
  • 1 teaspoon Italian seasoning
  • ½ cup dry white wine
  • 1 tablespoon butter
  • 2 cloves garlic minced
  • 1 ½ cups cherry tomatoes
  • 1 cup mozzarella cheese shredded
  • 2 tablespoons parmesan cheese grated
  • fresh basil for serving

  1. In a 10″ skillet, crisp up the bacon. Take away the bacon and the saved drippings.
  2. Italian seasoning, salt, and pepper are used to season chicken. Over medium-high heat, add chicken to the bacon drippings. 3–4 minutes for each side to brown.
  3. Put the chicken on a platter after removing it from the pan. Just until aromatic, add the garlic. Add wine and simmer for two to three minutes. Butter is whisked in.
  4. Add tomatoes and chicken to the pan. For about 5-7 minutes, simmer covered until the tomatoes are soft and the chicken is thoroughly cooked.
  5. Add cheeses on top and broil for one minute. Serve after stirring in bacon and fresh basil.

Notes

The thickness of the chicken breasts will affect how long they take to cook. Chicken needs to be 165°F. Avoid overcooking.
