A comforting weeknight dish is chicken lasagna roll ups. Rolls of lasagna noodles are filled with cheese, broccoli, and tender chicken before being baked in a handmade cream sauce.

How do Lasagna Roll-Ups work?
We adore fresh spins on traditional lasagna!
Instead of putting the usual lasagna ingredients in a pan, a lasagna roll-up is created by rolling the spaghetti with all of the ingredients.
In this instance, we’ve constructed rolls stuffed with chicken and vegetables using the same components as our famous chicken lasagna.
Ingredients for Chicken Lasagna Roll-Ups
CHEESE Ricotta works if you’d prefer, but our recipe lightens it up by using a cottage cheese blend.
VEGETABLES Chicken and broccoli are a traditional comfort meal pairing, but any steamed vegetable, such as carrots or asparagus, will do.
SAUCE This dish calls for a rich homemade sauce. It is tasty and rich while also being a little lighter than a typical alfredo sauce. Although I like the flavor of the homemade sauce, you can use a few jars of alfredo sauce to speed up preparation.
Making Chicken Lasagna Roll-Ups: A Recipe
There are a few steps in preparing chicken lasagna roll-ups, but the outcome is so delectable that it’s worth the extra work!
- Noodles should be cooked and kept aside. Mix the cheese mixture, then reserve.
- Make the cream sauce as directed in the recipe below, then spoon some of it into the bottom of the casserole.
- Noodles should be spread out with cheese, broccoli, and chicken on each one. Each packed noodle is rolled up and placed seam-side down on a plate.
- Add the leftover sauce on top of the rolls, then bake them.
- Bake with the cover off, cheese on top, until bubbling.
Serving suggestions
Serve with grilled lemon parmesan asparagus on the side, our great homemade garlic bread, a fresh and tangy Caprese salad, and a delightful simple cheesecake for dessert.
Leftovers
- Creamy chicken roll-ups can be stored in the fridge for up to three days in a closed container. The entire casserole or individual servings can be reheated in the oven or microwave. Add more cheese, then broil the roll-ups until the cheese is bubbling and browned.
- Roll-ups of cooked and cooled lasagna can be frozen for up to two months. Use one of the ways mentioned above to thaw and reheat.

Ingredients for Chicken Lasagna Roll Ups
- 12 lasagna noodles cooked and cooled
- 4 cups cooked chicken
- 3 cups broccoli cooked and cooled
- 2 ½ cups mozzarella shredded
cheese mixture
- 2 cups cottage cheese or ricotta
- 1 cup mozzarella shredded
- ¼ cup parmesan shredded
- 2 eggs
- 2 tablespoons parsley chopped
sauce
- ¼ cup butter
- 1 onion diced
- 2 cloves garlic minced
- ¼ cup flour
- 2 cups chicken broth
- 1 ½ cups milk
- 4 ounces cream cheese
- 1 cup mozzarella shredded
- ¼ cup Parmesan shredded
- 1 teaspoon dried basil
- ½ teaspoon oregano chopped
Instructions
- Set the oven to 350°F.
- Combine the ingredients for the cheese combination, then reserve.

- For about 3 minutes, in a medium saucepan, sauté the onion and garlic in butter until they are soft. Cook for 1-2 minutes after adding the flour.
- progressively add milk and broth, whisking after each addition. It will start off thick but eventually thin out. Add cream cheese and whisk until melted after all the liquid has been included. 1 minute of simmering
- Add mozzarella cheese, Parmesan, dried basil, and oregano after removing from the heat.

- In a 9×13 pan, spread 1 cup of the sauce mixture on the bottom.
- Set noodles out. Over noodles, distribute the chicken, broccoli, and cheese mixture. Add 2 tablespoons of mozzarella cheese to each.
- After rolling, set the seam-side down in the pan. Add the remaining sauce on top.
30 minutes of baking while foil is covered. After removing the foil, top with the remaining cheese, and bake for - 15 more minutes.
- Before serving, remove from the oven and let cool for 15 minutes.
Notes
Ricotta can be used in place of cottage cheese if you want.
You can substitute or add any steamed vegetable, such as carrots or asparagus, in place of the broccoli.
Although we like the flavor of the homemade sauce, you can replace a jar or two of alfredo sauce to speed up preparation.
