When my husband was the manager of a steakhouse a few years ago, I adored taking advantage of the opportunity to eat there. The iceberg wedge salad was one of the things I constantly yearned for.
The best thing about this recipe for a wedge salad is how simple it is to prepare at home. Serve it next to grilled chicken or even as a side dish to a steak supper!
How to Prepare a Wedge Salad with Lettuce
In order for the lettuce to maintain its shape when constructing a wedge salad, it must be clean. To prevent your salad from being watery, be sure to thoroughly drain the water. Pick an iceberg lettuce head that is sturdy and solid.
- Delete any outside leaves that have wilted. Slice the lettuce into quarters with a large knife, leaving the center intact (or 6ths depending on the size of the head of lettuce). The wedge needs to be held together by the core.
- Run cold water, then place the wedges of the iceberg that were cut into pieces under the cold running water while letting the water trickle between the leaves. If the head of lettuce is extremely compact, gently divide it so that water can pass through.
- Shake a few times, then let the liquid drain in a strainer for a little while.
How to Make a Salad that is Extra Crisp
As stated above, wash the lettuce and place it in a container or bag with a piece of paper towel. Place the container or bag in the refrigerator for a few hours or overnight. The lettuce will be extremely crisp and available for eating whenever you choose!
Dressing for a wedge salad
Simply whisk the ingredients in a small bowl and drizzle to make the homemade dressing.
Blue cheese dressing: A classic and simple recipe for blue cheese dressing. The flavor of the homemade dressing is what we favor. If you can, give it at least 30 minutes to allow the flavors to meld. (Prepare more blue cheese dressing to serve alongside chicken wings.)

Ingredients

- ½ cup mayonnaise
- ⅓ cup buttermilk
- ¼ cup blue cheese crumbled
- Also, ¼ cup sour cream
- ¼ cup red wine vinegar
- 1 ½ tablespoon white sugar
- 1 tablespoon extra-virgin olive oil
salad
- 1 head iceberg lettuce cut into 8 wedges
- 2 tomatoes diced
- 1 cup bacon cooked and crumbled
- ½ cup blue cheese crumbled
- ¼ cup fresh parsley chopped
Instructions
- The lettuce head should be cleared of any wilted outer leaves. Use a large knife to cut the lettuce into quarters while leaving the center intact. The wedge needs to be held together by the core.
- If the wedges are particularly tightly packed together, gently separate them as needed to allow water to pass through. While getting the other ingredients ready, shake a few times to dry and then drain in a strainer.
- In a bowl, mix the ingredients for the dressing with a hand mixer. If necessary, taste and add salt and pepper. Up to the serving time, chill.
- On each plate, add one lettuce wedge to start the salad. Each lettuce wedge should get an equal amount of dressing.
- Each salad should have tomatoes, bacon, and blue cheese on top, along with some fresh parsley for decoration.
Notes
Ranch dressing produced at home can take the place of blue cheese dressing.
To make the wedges extra crispy, wash them a few hours in advance (or up to 24 hours in advance) and place them in the refrigerator.
