How are these baked cod nibbles prepared?

Making these bites requires:

  • cut a 1 lb cod loin into approximately 1-inch pieces
  • dredge the cod pieces into whole wheat flour
  • dip them into a beaten egg
  • bread them with seasoned panko crumbs
  • place them onto an oiled baking sheet
  • drizzle the fish with oil
  • baked at 425 F for 12-15 minutes until the fish flakes easily and the crust is crispy and golden brown
  • sprinkle with flaky sea salt
  • serve fish bites with tartar sauce and lemon wedges

Dredging and breading are simple and happen extremely quickly, so don’t be intimidated. And these fish nuggets are worth it.

This livens up lean white fish like cod, haddock, and others that can be somewhat bland in flavor. Additionally, without this procedure, you wouldn’t be able to achieve the beloved, irresistible crispy coating.

For these baked fish bites, can you substitute another white fish for the cod?

Yep! Although cod fish is used in this dish, you can substitute any fish you have on hand. Simply be sure to select a mild, flaky white fish. Black sea bass, halibut, haddock, and tilapia are all good options.

Depending on the filet’s thickness and the size of the bites, you’ll need to alter the cooking time. Additionally, make an effort to buy a fish filet or loin that is uniform in size throughout so that all the parts cook through at the same time.

INGREDIENTS

  • 1/4 cup whole wheat flour
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1 1/2 cups seasoned panko crumbs Italian seasoned
  • 1 teaspoon Italian seasoning
  • 2 eggs beaten
  • 1 lb cod loin or other white fish
  • avocado oil

For serving

  • Flaky sea salt
  • Tartar sauce
  • Lemon wedges

INSTRUCTIONS

  1. Set the oven to 425 degrees. Spray avocado or vegetable oil liberally onto a sizable baking sheet.
  2. In a medium-sized shallow bowl, combine whole wheat flour, garlic powder, salt, and black pepper. Set beaten eggs in another bowl. Another medium-sized shallow bowl is used to combine panko and Italian spice.
  3. Place each piece of fish on the baking sheet after dredging it in the flour, shaking off any excess, beaten egg, and panko mixture, coating both sides.
  4. Fish bites should be evenly sprayed with oil spray before avocado oil is drizzled over the bites (this will help them crisp up).
  5. Depending on the size of the fish bites, bake for 12 to 15 minutes, or until the fish flakes easily when tested with a fork.
  6. Remove from oven, then season with sea salt flakes.
  7. Serve the nibbles with lemon wedges and tartar sauce.
