PICKLES: Select a pickle. Pickle spears, slices, or oval slices can all be used to make deep-fried pickles. Pickle chips can easily be made with spicy, sour, or garlic pickles, which will change the recipe each time.

Tip: Use thicker slices wherever possible (or slice the pickles yourself). You won’t get enough pickle flavor in each mouthful if they are too thin.

Ingredients

  • Sandwich sliced dill pickles in about 12 slices
  • 1-2 cups Panko Breadcrumbs
  • Oil for frying

  • 1 cup all-purpose flour
  • 1 cup milk
  • ½ teaspoon black pepper
  • 1 teaspoon baking powder
  • 1 egg
  • ½ teaspoon dill optional
  • 1 teaspoon paprika

  1. Heat the oil to a temperature between 360° and 370°F.
  2. Stirring until smooth, combine all batter ingredients, and set aside for at least five minutes.
  3. Slices of a pickle should be dabbed on paper towels to dry. Put a bowl with roughly 1/2 cup of Panko bread crumbs in it (add more as needed). It is best to work in tiny batches because they don’t stick if they get moist.
  4. Each pickle slice should be dipped in the wet batter, then gently tossed in the bread crumbs. Letting the pickles set for about a minute will help the bread crumbs adhere better.
  5. Fry for 3 to 4 minutes in small batches, or until golden and crispy.
  6. Accompany with ranch dip.
