A flavorful and fresh dish that is simple to prepare and excellent is oven fajitas.

A straightforward spice blend is used to season the chicken, onions, and bell peppers, which are then baked until the peppers are tender-crisp.

With your preferred toppings, these are excellent stacked high in a tortilla. For a great supper, top with our favorite Pico de Gallo and serve with a portion of cilantro lime rice.

The Purpose of Baking Fajitas

One of my all-time favorite dinners is chicken fajitas! Any fajitas, even those with beef, shrimp, or pig, I should say! When the vegetables are added and everything cooks together in one dish in the oven, the chicken fajitas become soft and incredibly tasty.

So simply combine the ingredients, place them in the oven, and then step away for a simple, fast, and clean dish!

Making Oven-Baked Fajitas

To begin, combine the tomatoes, chicken, onions, and seasonings. I’ve discovered that cutting chicken while it’s partially defrosted is considerably simpler!

  1. In a casserole dish, combine all the ingredients (apart from the peppers) according to the recipe below.
  2. Bake the casserole dish for approximately 15 minutes. Bake for 10 more minutes after adding the bell peppers.
  3. The tortillas (corn or flour) should be heated as directed on the package, then filled.

Once finished, add a squeeze of fresh lime and some cilantro to give the fajitas a burst of flavor.

My favorite toppings for fajitas

Fajitas are a great vehicle for all kinds of inventive additions! Set up a platter of vibrant add-ins for everyone to eat from. Some of my favorites are listed here!

  • Beans, whether they are refried, pinto, black, or pinquito.
  • Rice, either brown or white (seasoned)
  • Cheese: Cheddar, Monterey Jack, and Cotija
  • salsa, guacamole, and sour cream
  • vegetable: potatoes with zucchini
  • Sliced green chiles, black olives, and jalapenos, as well as pepitas, are additional toppings (toasted pumpkin seeds)

Have Extras?

If you’re fortunate enough to have any leftovers, they make fantastic quesadillas for lunch the following day or are ideal on a salad with salsa and sour cream dressing (or greek yogurt).

Ingredients

  • 1 pound boneless skinless chicken breasts cut into strips about 3 chicken breast halves
  • 1 onion sliced
  • 5-6 cups sliced bell peppers about 3 peppers
  • 10 ounces diced tomatoes with chiles mild or hot
  • 2 teaspoons chili powder
  • ½ teaspoon cumin
  • ¼ teaspoon seasoning salt
  • 1 tablespoon olive oil
  • black pepper to taste
  • lime
  • flour or corn tortillas for serving

optional toppings

  • cheese
  • sour cream
  • lettuce
  • cilantro
  • salsa
  • jalapeno peppers

  1. Set the oven to 425 °F.
  2. Well-drain tomatoes Chicken, onion, chopped tomatoes, cumin, chili powder, salt, pepper, olive oil—everything—should be mixed. Bake for 15 minutes after placing in a 9×13 pan.
  3. Bell peppers are added after the oven is removed. Add another 10 minutes to the baking. Remove from oven, then sprinkle with lime juice.
  4. In the interim, reheat the tortillas as directed on the package.
  5. With the preferred toppings, serve the chicken mixture in tortillas.
