Ingredients
- 1 pound lean ground beef
- 1 onion chopped
- 2 cloves garlic minced
- 1 bell pepper diced, green or red
- 2 tablespoons taco seasoning
- ¼ cup water
- ¾ cup enchilada sauce
- 2 cups cheddar cheese shredded, divided

- 1 box corn muffin mix 8.5 oz
- ½ cup sour cream
- ½ cup corn kernels canned, fresh, or frozen
- ⅓ cup milk
- 1 egg
- fresh cilantro chopped, for garnish
Instructions
- Set the oven to 350°F.
- In a 10″ ovenproof skillet, mix the meat, onion, bell pepper, and garlic. until no longer pink, cook. Remove any fat.
- Add 1/4 cup water and taco seasoning. Simmer the water until it evaporates. Add enchilada sauce and stir. Add 1 1/2 cups of cheese on top.
- Combine corn, sour cream, milk, egg, and corn muffin mix. Spread the beef mixture with this.
- The remaining cheese is on top then bakes for 35 to 40 minutes.
- Serve with cilantro as a garnish.

Tamale Pie keeps well in the fridge for up to 5 days when stored in an airtight container.
