  • 1/3 of a cup of fresh blueberries
  • Tbsp. of water
  • 1/4 cup granulated sugar, which you may taste-test
  • 2 1/3 cups plain, low-fat Greek yogurt
  • 1 cup granola with cinnamon (break up larger clusters before measuring)

Alternatives and Variations that are Doable

  • Replace the sugar with stevia to create healthy parfaits (check package labels for conversion, each brand is a bit different).
  • Try strawberries, raspberries, cherries, peaches, or any other fruit in place of blueberries.
  • If using flavored yogurt, slightly cut back on the amount of sugar or honey called for in the recipe. Another choice is to add a teaspoon of coconut extract to the plain yogurt.
  • Make them without dairy. Use yogurt that is dairy-free only.
  • If you’d rather, swap out the granola for another taste. I merely enjoy cinnamon and blueberries together.
  • You can also include additional fillers in the parfait, such as chopped nuts, chia seeds, or finely shredded oats.
  • Replace sugar with your preferred alternative, such as honey or maple syrup.

Making a Yogurt Parfait

  1. Making Fruit Compote: In a small saucepan over medium heat, bring 2 cups of blueberries, sugar, and water to a simmer.
  2. Cook for 5 to 8 minutes, frequently stirring, until the berries have burst and the compote has thickened. The blueberry compote has to be 1 cup.
  3. The compote should be well chilled, so pour the mixture into a bowl and put it in the fridge to cool. To ensure that the granola stays crunchy, put off assembling parfaits until you are almost ready to serve them.
  4. In 12 oz. cups, layer 1/3 cup yogurt, 2 Tbsp blueberry compote, 2 Tbsp granola, and 1 Tbsp blueberries to make a parfait.
  5. Repeat the layering procedure. Serve. Five cups with yogurt parfaits in them.

Can they be prepared beforehand?

  • I suggest serving soon after assembly for the best results. If not, the yogurt and compote’s moisture will cause the granola to become stale and mushy.
  • The compote, however, can be prepared a few days in advance. The natural pectins will thicken it as it rests, but if you need to thin it out, you can add a little fruit juice or water.
  • I’d advise only making 4 layers if you really need to prepare things ahead of time for a brunch or something (rather than 8). Layer yogurt, fruit compote, and fresh blueberries before topping with granola.

Advice for Making the Best Parfaits

  • Although you may use frozen fruit for the compote, if you decide to stack fruit into the parfait, you’ll want to stay with fresh fruit. You may just skip the fresh fruit layer if it’s winter and you’re having trouble finding decent-quality fresh fruit.
  • Granola from the store or home works well in this recipe.
  • For the finest flavor, choose a rich and creamy yogurt. I advise full fat or low fat (not fat-free). Here, Fage is my fave.
  • Remember to break apart larger clumps of granola for more even layering for better layering.

  1. A small pot over medium heat should be used to cook 2 cups of blueberries together with the sugar and water.
  2. Cook for 5 to 8 minutes, frequently stirring, until the berries have burst and the compote has thickened. The blueberry compote has to be 1 cup.
  3. The mixture should be poured into a basin and placed in the refrigerator to cool. To ensure that the granola stays crunchy, put off assembling parfaits until you are almost ready to serve them.
  4. To assemble parfaits: among four (12 oz.) cups layer 1/3 cup yogurt, 2 Tbsp blueberry compote, 2 Tbsp granola, and 1 Tbsp blueberries.
  5. Repeat the layering procedure. Serve.
