Yes! This recipe for fish tacos can be modified to use whatever white fish you choose. It would be nice to eat haddock, tilapia, pollock, or hake.

If fresh fish is not available, feel free to use frozen fish. Just be careful to pat the food extremely dry before pan frying after thawing it overnight in the refrigerator.

INGREDIENTS

For the pan-fried cod

  • 1 lb cod or haddock filet
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon kosher salt
  • 1 teaspoon safflower oil, or any neutral oil

For the tacos

  • 8 corn or flour tortillas, warmed
  • 1/2 cup guacamole or 1 avocado, thinly sliced
  • 2 cups baby spring mix
  • 1/2 cup roughly chopped cilantro
  • 1 bunch of scallions, thinly sliced
  • 2 ounces Cotija cheese, crumbled

For serving

  • 1 lime, cut into wedges

  1. With a paper towel, thoroughly dry the fish. Add salt, garlic, and cumin to both sides. Over medium-high heat, warm the oil in a medium sauté pan. Add fish to a heated pan.
  2. Cook the fish until it is opaque and flakes easily with a fork, about 3 to 4 minutes on one side, then flip. Get rid of the heat.
  3. Spread guacamole or avocado on the tortillas, followed by the baby greens, cilantro, scallions, and cheese to assemble tacos.
