Ideal for the summer

The ideal summer supper is kabobs, like most grilling dishes! Beautifully arranged chicken and fresh vegetables are skewered and then roasted until they are caramelized.

There are countless options. These Hawaiian Chicken Kabobs taste great fresh off the grill and are ideal the next day for lunch when combined with a salad.

Make sure to soak wooden skewers before using them on the grill to prevent burning!

Don’t want to stand outside in the snow or don’t have a grill? You can also make these kabobs in the oven, no problem!

  1. Set the oven’s temperature to 450 degrees Fahrenheit.
  2. Place the prepared kabobs on a pan with foil inside.
  3. Bake the chicken for 22–26 minutes, or until it reaches 165°F.

Easy as pie!

The abundance of fresh food is one of the best things about summer, and I make an effort to include it in every meal. These Hawaiian Chicken Kabobs are topped with a Pineapple Honey BBQ sauce and stuffed with peppers, chicken, and of course, pineapple!

It’s excellent to have a rich, flavorful BBQ sauce to lend that sticky, caramelized finish that we all adore.

I merely infused the mixture with pineapple juice… I frequently mix it with my barbecue sauce to use as a basting sauce. This results in juicy, tender kabobs that have a strong pineapple flavor.

Excellent for marinades

It’s simple and delicious to make a fantastic marinade for chicken! For this marinade, I use pineapple juice because most marinades require a little acidity.

This not only adds flavor and helps the sauce caramelize, but it also somewhat tenderizes the meat (don’t worry, it doesn’t make the flesh mushy).

If you haven’t already noticed, I’m kind of in love with these mixes! Two pouches of the mix are included in each package, and they may be blended with any liquid to make your sauces and marinades.

For inspiration for creating the ideal BBQ sauce for your summer grilling, consider beer, cola, juice, or root beer.

Ingredients

  • 4 large chicken breasts boneless skinless
  • 1 cup mushrooms halved
  • 1 red bell pepper diced into bite-sized pieces
  •  Also, 1 orange bell pepper diced into bite-sized pieces
  • 1 cup pineapple diced into bite-sized pieces
  • Also, 1 green bell pepper diced into bite-sized pieces
  • 1 red onion diced into bite-sized pieces

sauce

  • 1 package KC Masterpiece® BBQ Sauce & Dry Rub Sweet Honey flavor
  • 1 ¾ cups pineapple juice divided

  1. Combine 1 box of KC Masterpiece® BBQ Sauce & Dry Rub with 3/4 cup pineapple juice. Place aside.

  1. Make bite-sized chicken pieces. Combine the remaining pineapple juice, 1 pouch of KC Masterpiece® BBQ Sauce & Dry Rub, and the chicken in a sizable zippered bag. 30 minutes of marinating
  2. Set the grill to medium-high heat.
  3. Chicken and veggies are skewered together, then slathered with barbecue sauce.
  4. Cook on the grill for 12 to 16 minutes, or until done.

Notes

Wooden skewers should be pre-soaked in water to prevent scorching or charring on the grill.

For even cooking, slice the meat and veggies into the same sizes.

When chicken is cooked, a meat thermometer should read 165°F. Quickly remove from grill.
