You must prepare these nachos if you plan to watch the Super Bowl this weekend. Even if you’re not planning on watching the Super Bowl this weekend, you must still cook these nachos.

Even though Jack and I aren’t huge football fans, we do enjoy football-related meals. The best nachos ever are these loaded ones.

Each bite is the ideal balance of acidic, spicy flavors with crispy, creamy textures. You can eat them for dinner or serve them as an appetizer at a gathering. Either method, the plate will be finished in a short period of time.

Now for the confessions: The nachos you’re eating right now are the cheesiest you’ve ever had. However, there is no cheese in this recipe.

It is entirely vegan, in fact! I use these plant-based nacho toppings rather than heaping ground meat and shredded cheese on top of tortilla chips:

  • Vegan nacho cheese: Just as creamy and delectable as the genuine thing, this oozy, gooey vegan queso! I prepare it using straightforward, whole-food ingredients like nutritional yeast, cashews, and pureed sweet and yellow potatoes. It gives the nachos a strong flavor akin to cheddar cheese.
  • I have two recipes for plant-based taco meat, both of which are excellent for these nachos. One is a hearty, flavorful mashup of walnuts and shiitake mushrooms. The other makes use of store-bought vegan ground meat. It is lightly spicy and incredibly hearty because it is prepared using a homemade taco seasoning mix of chili powder, onion powder, and cumin. No matter whatever path you choose, you won’t be sorry!

After adding the taco “meat” and drizzling the cheese sauce over the tortilla chips, I garnish my nachos with the following seasonal ingredients:

  • fresh cilantro and green onions
  • crunchy radishes
  • Creamy avocado
  • juicy tomatoes
  • spicy jalapenos
  • and pickled red onions.

The mixture is SO mouthwatering! The absence of cheese or meat won’t be felt at all.

Top Nacho Recipe Advice

  • Just before serving, put them together. The cheese sauce and taco meat should still be heated and the chips should be crispy when you assemble these nachos. The chips will soften under the queso if they are left out for too long. Always build your nachos just before you consume them since no one enjoys soggy snacks.
  • No chip should go untopped! Eating the top layer of a filled nacho platter only to discover a stack of barren chips underneath is one of my pet peeves. Make careful to stack the toppings throughout, getting a little bit of everything on each chip, to create an outstanding nacho tray.
  • Be imaginative! There are a ton of additional topping combinations that would also be fantastic in the recipe below. Have fun mixing and matching your favorite nacho toppings! Replace the avocado with guacamole or the diced tomatoes and scallions with pico de gallo. Pickled jalapenos can be used to top the nachos in place of serranos, and black beans or refried beans can be used in place of taco “meat.” For a surprisingly sweet touch, top the nachos with mango or pineapple salsa instead of vegan sour cream.   1. On a dish or baking sheet, spread the tortilla chips out evenly. Top with the taco “meat,” tomato, scallions, serrano, avocado, radishes, and pickled onions before drizzling with cheese sauce. Serve with lime wedges for squeezing and cilantro for garnish.
