Ingredients

  • ¾ cup couscous
  • 1 tablespoon butter
  • ¾ cup water
  • 1 cup tomatoes
  • 1 cup cucumber sliced
  • ¼ cup red onion thinly sliced
  • 1 bell pepper chopped
  • ⅓ cup feta cheese crumbled
  • ⅓ cup flat leaf parsley chopped

dressing

  • 3 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons red wine vinegar
  • 1 ½ teaspoon honey
  • 1 clove garlic minced
  • salt & pepper to taste

  1. Boiling water, butter, and a dash of salt. Stir in the couscous and cover. Remove from heat and allow it to rest for five minutes.
  2. In the meantime, combine the dressing ingredients in a jar by shaking it vigorously.
  3. Fluff the couscous with a fork after placing it in a big bowl. Allow to totally cool.
  4. Add the dressing and the other salad ingredients. Serve after tossing to mix.

Notes

If you’d rather, you may swap out the couscous for cooked quinoa or rice.

To this recipe, you can add any fresh (or even roasted) vegetable. Kale or spinach that has been chopped is a great addition.
