Over the last few decades, potatoes have earned a terrible image, yet they’re one of my favorite ingredients.

They’re cheap, don’t spoil easily, are versatile, and incredibly simple to prepare. When it comes to budget-friendly side dishes, these Parmesan Roasted Potatoes are as simple as they come.

A simple coating of grated Parmesan, garlic powder, paprika, salt, and pepper makes a deliciously crunchy covering when the potatoes are roasted.

These potatoes can be used as a dinner side dish, a ketchup-dipped snack, or the base of a breakfast bowl.

Whatever you do with them, be aware that they are quite addicting!

I’ve prepared these Parmesan Roasted Potatoes with almost every sort of potato I could find, and they’re always delicious. Russet potatoes are the least priced, but they provide a potato with a slightly drier texture.

Red potatoes, such as those featured in the photos in this piece, offer a little creamier texture that is ideal. Yukon gold and baby creamer potatoes are also excellent choices.

GRATED OR SHREDDED PARMESAN?

Because it was the most cost-effective choice, I used grated Parmesan from a can, but if you have access to freshly shredded Parmesan, your potatoes would taste even better!

You’ll want to be careful not to stir the potatoes too soon before the Parmesan has cooked into a crust because shredded Parmesan does not adhere to the potatoes as well as grated Parmesan.

SEASONING IDEAS

I kept the flavors in the recipe below minimal, using only salt, pepper, garlic powder, and a pinch of paprika for color.

Sprinkle on some Italian spice, Cajun seasoning, Greek seasoning, garlic herb seasoning, ranch seasoning, or steak seasoning to amp up the flavor.

When it comes to how much, there are no rules; simply sprinkle it liberally and measure with your heart!

WHAT TO SERVE WITH ROASTED POTATOES WITH PARMESAN

As I indicated in the opening, these roasted potatoes make a great breakfast, lunch, or dinner side dish.

Homemade Meatloaf, Ranch Turkey Burgers, Baked Chicken Drumsticks, BBQ Cheddar Chicken, or Creamy Mushroom Chicken are all terrific options.

INGREDIENTS

  • 2 lbs. red potatoes ($2.58)
  • 2 Tbsp. olive oil ($0.32)
  • 1/3 cup grated Parmesan ($0.59)
  • 1/2 tsp garlic powder ($0.05)
  • 1/2 tsp paprika ($0.05)
  • 1/4 tsp salt ($0.02)
  • 1/4 tsp freshly cracked black pepper ($0.02)
  • 2 Tbsp. chopped fresh parsley (optional) ($0.20)

INSTRUCTIONS

  1. Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius). Cut the potatoes into 1-inch pieces after washing them. In a large mixing bowl, mash the potatoes.
  2. Mix the grated Parmesan, garlic powder, paprika, salt, and pepper together in a small bowl.
  3. Toss the potatoes in olive oil to coat them. Toss the potatoes again with the Parmesan mixture.
  4. With the sliced sides facing down, spread the potatoes out on a wide baking sheet (coated with parchment for easy cleanup, if necessary).
  5. After 30 minutes in the oven, toss the potatoes thoroughly. Return the potatoes to the oven for 5-10 minutes more, or until thoroughly browned.
  6. If preferred, season the potatoes with a pinch of salt before serving.

  1. Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius). 2 pounds of red potatoes, washed and cut into 1-inch chunks In a big mixing bowl, put the potatoes.
  2. 1/2 tsp garlic powder, 1/2 tsp paprika, 1/4 tsp salt, and 1/4 tsp freshly cracked pepper in a small bowl
