Ingredients
- 2 tablespoons paprika
- 1 teaspoon chipotle powder
- 1 ½ tablespoon cumin powder
- ½ teaspoon salt or to taste
- 1 tablespoon dried oregano
- 1 tablespoon onion powder
- 2 tablespoons vegetable oil
- 1 onion sliced
- 3 cups bell peppers sliced, I used red and yellow bell peppers
- 1 pound large shrimp deveined and peeled
- cilantro lime, sour cream, and guacamole for topping
- tortillas for serving
Instructions
- To prepare fajita seasoning, combine salt, paprika, chipotle powder, cumin powder, oregano, and onion powder in a basin.
- The shrimp should be thoroughly covered after receiving the first half of the spice. Place aside.
- The onions and bell peppers are added to a big cast iron skillet that is heated up with a tablespoon of oil. Cook the vegetables for 4-5 minutes, or until they start to soften. Mix well after adding the last of the spices.
- Vegetables in the skillet can be slid to one side.
- The shrimp is then added to the skillet with the remaining oil. The shrimp should be pink and fully cooked after 3–4 minutes of cooking.
- Serve with your favorite toppings in tortillas.
