This vibrant hummus wrap is filled with crisp fresh vegetables, hemp seeds, and light spinach hummus. It is ideal for packing as a nutritious lunch and is sure to brighten up your day!

This month is going to be filled with a significant amount of time spent flying.

I don’t mean to be negative, but travel is one of those things where I adore the destination(s) but despise the process of getting there, in particular the food that is offered during the journey (also known as airport cuisine).

It has become a habit of mine to bring my food on the plane, and since I will be flying for more than e (!) on Friday, I will make a wonderful hummus wrap to take with me.

These wraps would make wonderful additions to lunch boxes at school as well.

This recipe was conceived when I returned from a trip to New York City a few months ago with some hummus wraps that I purchased at the Whole Foods store located in Union Square.

They were easy to transport and delicious, and I thought it could be fun to recreate a version of them for our travel later this week.

Wrapping Hummus: The Step-by-Step Guide

The key to a tasty hummus wrap is the quality of the hummus, so the first step is to whip up the bright and fresh “glue” that will hold everything together.

Chickpeas, tahini, some vegetable broth (which keeps these light because you can use a little less tahini), garlic, spices, handfuls of spinach, and a little bit of parsley are the ingredients that go into making this hummus, which results in hummus that is extremely light and very green.

The next step is to assemble the lunch wrappers and put hummus on them. After spreading the hummus, I covered it with a layer of spinach.

After that, I cut thin strips of crunchy rainbow bell peppers and cucumbers, place them in the center of the wraps, and top them with a sprinkle of hemp seeds for an added crunch.

It’s quite similar to layering ingredients for a sushi roll; the only difference is that I’m using whole-grain wraps.

At long last, it’s time to get rolling! Because I’m using little tortillas for these vegan wraps, I don’t bother tucking the sides in; I just roll them up like a cigar.

Tips for the Hummus Wrap

Do you want to prepare a hummus wrap that gets an A+? To help you roll them up and take them with you wherever you go, here are some of my finest tips and tricks:

  • Cut your vegetables into long, thin strips. This way, you’ll be able to sample a bit of each filling in each mouthful you take.
  • Don’t bother with the tomatoes. Stick to crisp veggie fillings like the ones that are in the recipe if you aren’t planning to eat your hummus wrap right away. When you add juicy items to your hummus wrap, such as tomatoes, the tortilla will become soggy, and nobody enjoys a wet hummus wrap.
  • Wrap them in some aluminum foil. If you are going to transport them anywhere, this step will assist you in keeping the seal nice and tight. Variations on Hummus Wrap

It is quite enjoyable for me to prepare these bite-sized treats by the recipe; nevertheless, as is the case with other types of sandwiches and wraps, it is also enjoyable to experiment with different combinations from time to time. The following is a list of some of my favorite methods to switch things up:

  • Swap out the hummus, will you? These are delicious when paired with either my beet hummus, my butternut squash hummus, or my curried red lentil hummus.
  • Change up the vegetables. As I mentioned before, I like to steer clear of stuffing my wraps with juicy vegetables such as tomatoes. However, you could certainly go for crunchy radishes, shredded red cabbage, shaved turnips, kohlrabi, scallions, or arugula instead.
  • Add some heat to them by nestling some pickled jalapenos into them.
  • Make a roasted veggie wrap! Adding roasted red peppers, sweet potatoes, eggplant, cauliflower, or broccoli to this dish would make it even more delectable.
  • Add a herb. My preferred method for giving a lunch wrap a pleasant, energizing kick is to sprinkle on a few leaves of fresh mint, basil, or cilantro.

One of my favorite dishes for eating on the move is this Spinach Hummus Wrap. It has a delightful flavor and is great for packing in lunches because it is made with a hummus spread that has been lightened up as well as peppers and cucumbers.

Ingredients

  • 4 large tortillas (I used these)
  • Several handfuls of spinach leaves – about 8 per wrap
  • 1 cucumber, cut into long thin slices – 2 per wrap
  • 2-3 mixed (mild) peppers – about 6 slices per wrap
  • Fresh parsley sprigs, optional
  • Tofu or another choice of protein, optional
  • Sprinkle of hemp seeds, optional

Spinach Hummus (makes about 1 ½ cups)

  • 1 (15-ounce) can of chickpeas, drained and rinsed
  • ¼ cup vegetable broth (or water)
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons tahini
  • 1 garlic clove
  • ½ teaspoon sea salt
  • ¼ cup fresh parsley
  • ⅛ teaspoon cumin
  • ⅛ teaspoon smoked paprika
  • Freshly ground black pepper, to taste
  • 1½ cups packed fresh spinach

  1. Prepare the Hummus with Spinach: Blend the chickpeas, vegetable broth, lemon juice, tahini, garlic, salt, parsley, cumin, paprika, and black pepper in a food processor until smooth. After adding the spinach, combine the mixture once more. Put in the refrigerator until ready to use.
  2. When putting together the wraps, spread approximately a quarter cup of hummus on each wrap, leaving a border of about an inch and a half around the borders. First add the spinach leaves, then the cucumber, and finish with the pepper slices. Fresh parsley, your preferred protein, and hemp seeds, if desired, should be sprinkled on top before serving. After rolling the wrappers, wrap each one in a piece of foil. Refrigerate until ready to use.
