It is a mainstay in our home and is the ideal side dish to offer with traditional Tex-Mex dishes like Easy Fish Tacos, our favorite creamy chicken enchiladas, or even taco soup!
This Tomato Rice side dish is simple to make with normal white rice from your cupboard. Only a few items are required, most of which you probably already have in your home!
A preferred side dish
Our meals frequently include rice, and most of the time we quickly cook it from scratch.
Rice prepared from scratch has considerably more flavor than rice from a box, and you may adjust the seasoning and spice to your preferences (plus you can control the salt levels).
All you need is some plain white rice, some seasonings in the Tex-Mex manner, and some tomato sauce. It’s all cooked at the same time to provide a tasty side dish! Preparing this rice requires a little more effort than making regular white rice.
We especially enjoy this with burritos or on taco night! I enjoy including my homemade taco seasoning or even a can of pinto or black beans!

A Delectable TexMex Classic
This tomato rice has a wonderful flavor and goes well with your favorite Tex-Mex recipes, but it is not rice from Mexico itself. To make Mexican rice, tomato and onion are blended with other ingredients before being added to the rice.

- Rice should be browned by sautéing it with onions, butter, and rice for about five minutes, or until it turns golden.
- Add seasonings: Include tomato sauce, chicken broth, and seasonings.
- Cook: When the rice is entirely cooked, simmer it for about 15 minutes with the lid on. When finished, leave covered for roughly 5 minutes.
It’s that simple! Before serving, I add a minced and seeded jalapeño for flavor, along with a generous squeeze of lime.

With just a few things you most likely already have in the kitchen, you can make a simple rice meal using the plain white rice that is in the cupboard.

Ingredients
- 2 tablespoons butter
- 1 small onion diced
- 1 jalapeno seeded and minced, optional
- ½ teaspoon cumin
- 1 cup long grain white rice
- ¼ teaspoon oregano
- ½ teaspoon chili powder
- 1 ¾ cups chicken broth
- ⅔ cup tomato sauce
- lime & cilantro for garnish optional
Instructions for Tomato Rice
- Cook the rice, onions, butter, and jalapeno, if using, over medium heat for about 5 minutes, or until the rice is golden. For another minute, add the spices.
- Add the other ingredients and cook while stirring. Cook 15 minutes or until liquid is absorbed with the lid on and the heat reduced to a simmer.
- Remove from heat and cover for 5 to 10 minutes.
- Use a fork to fluff, then serve.
