My daughter’s all-time favorite food is tomato soup, and what’s not to love? It’s delicious, the ideal lunch or dinner, and it’s ready in a flash! We adore including extras like bacon, fresh croutons, a little cream, and tortellini, of course! It tastes fantastic when paired with fresh caesar salad or grilled cheese roll-ups.

Add your favorite meats to make chicken or sausage tortellini soup because tortellini soup is so adaptable! Before serving, stir in a few handfuls of spinach.

You are welcome to include any ingredients you have on hand, including peppers, macaroni noodles, mushrooms, and onions!

How to Make Tortellini Soup with Tomatoes

Making this simple tortellini soup recipe involves:

  1. In a saucepan, combine all of the tomato soup’s ingredients. It should be brought to a boil, then simmered for 8 minutes on low heat.
  2. Cook the tortellini in the interim.
  3. A hand blender is used to combine the soup mixture.
  4. Tortellini is added in the final minute of simmering after adding the cream and stirring for another 5 minutes.

How to Keep This Soup Fresh

Tortellini in this soup can become mushy if there are any leftovers, so we always leave it out and mix just before serving.

When the soup is heated and defrosted, add the cream if you want to freeze it (and freeze the tortellini separately). Serve this simple dish with a large, fresh Easy Italian Salad and 30 Minute Dinner Rolls or crusty bread for dipping.
