When avocado toast first appeared on the scene years ago, many people dismissed it as a fad. But I have to admit that I still occasionally eat it for breakfast or lunch, so I believe it’s here to stay.
It’s incredibly simple to make, filling, and healthy, and a perfect canvas for seasonally appropriate toppings. Why not adore it?
Below, you may find my basic recipe for avocado toast, along with five creative and sophisticated variations. I sincerely hope you adore them as much as I do, whether you eat them for breakfast, lunch, or a quick and simple dinner.
VARIATIONS IN AVOCADO TOAST RECIPE
Even plain avocado toast is great when made with quality bread and ripe avocados. But it can also act as a model for a variety of creative toppings.
A poached or scrambled egg, some extra-virgin olive oil, some freshly chopped herbs, black pepper, or red pepper flakes might be added.
Furthermore, even a tiny spray of tahini sauce, cilantro lime dressing, pesto, or chipotle sauce will amp up your toast.

1. Banh Mi Avo Toast

4. Sushi Toast
My fave by far! In this light, sweet, and savory variant, I top avocado toast with sushi fixings:

5. Everything & More
Using mashed avocado in place of cream cheese, my dairy-free take on a loaded everything bagel! What else is on it is as follows:
- Carrot, peeled into ribbons (Instead of lox!)
- Everything seasoning

TIPS FOR MAKING AVOCADO TOAST
It’s simple to make avocado toast! You probably already use a system of your own, but the following straightforward advice will improve it:
- Toast is made using excellent ingredients. Make use of the finest bread you can locate! Thick slices of sourdough or whole grain bread are my favorite to toast. As soon as the bread comes out of the toaster, lightly brush it with the cut side of a halved garlic clove for an added flavor boost.
- Avocado is simply mashed on the toast. Some recipes instruct you to mash the avocado in a separate dish before adding it to the bread, but in my opinion (we’re not creating guacamole), the more texture the avocado has, the better your toast will be. Cut the avocado in half, then remove the pit. Then, without cutting through the skin, score avocado cubes inside with a paring knife. Slice the flesh into small pieces and sprinkle it with flaky sea salt before scooping it up and spreading it on the toast. Alternately, cut the avocado in half, season it, then fan the slices on the bread. No need to smash!
- Salt and lemon should not be skipped. They brighten things up and make the flavors stand out! Before sprinkling it on the toast, I prefer to season the avocado inside the skin.

INGREDIENTS
- 1 ripe avocado
- Lemon, for squeezing
- Sea salt
- 2 to 4 slices of toasted bread
- Desired toppings, listed above, optional
INSTRUCTIONS
- Remove the pit and cut the avocado in half vertically. The avocado flesh should be diced while it is still inside the skin using a tiny knife. Sea salt and a squeeze of lemon juice are used to season the flesh.
- Slice the avocado, remove the flesh, and place it on the toasted bread. With the back of a fork, mash the avocado, then add the toppings of your choice.
