Have you ever tried roasting garlic? Your kitchen fills with a wonderful savory aroma while it cooks. It’s the kind of tantalizing perfume that, even if you’ve just completed lunch, will make you hungry.
This smell alone, in my opinion, is incentive enough to learn how to roast garlic at home.
The major reason to cook garlic is, of course, the flavor. It does not have any bite, unlike raw garlic. It has a sweet, mellow, nutty, and deep flavor.
As it roasts, it softens and becomes supple, creamy, and spreadable. It can be used to make soup or sauce, or it can be folded into mashed potatoes or spread on bread.
Adding roasted garlic to any dish can instantly transform it into something more tasty and sophisticated.
Garlic Roasting Techniques
I ask you to roast individual garlic cloves in many of my recipes. In some circumstances, my advice will differ from what you’ll read on this page.
Wrap the unpeeled garlic cloves in foil and sprinkle with olive oil before roasting for 20-30 minutes. Because the garlic is usually roasted in conjunction with something else, the oven temperatures in those recipes will differ.
If you don’t use garlic very often but need a couple of cloves for a recipe, this is a terrific way to go. However, after you’ve tried oven-roasted garlic, you may find yourself utilizing it more frequently than you anticipated.
I recommend roasting a couple of heads of garlic at a time to make it in quantity. Add some to whatever you’re making that day, and keep the remainder in the freezer.
Peeled, roasted garlic cloves can be frozen for up to 2 months if kept in an airtight container.
My approach for roasting garlic in bigger amounts is as follows:
- Trim the garlic first. Slice 1/4 inch from the top of a garlic bulb using a sharp knife.
- Then drizzle with the olive oil. Place the cut-side-up garlic cloves in a sheet of aluminum foil and drizzle with olive oil. Add a little salt as well. I like to roast the garlic in a tiny ramekin or baking dish so that it stays cut side up.
- After that, bake! Wrap the garlic cloves in foil and bake for 40-60 minutes at 350°F, or until golden brown and soft. That concludes our discussion. Peel the garlic and freeze it, or use one of the serving ideas below.
Uses for Roasted Garlic
Roasted garlic is an excellent method to add a rich, nutty flavor to a variety of dishes, including spreads, sauces, soups, and more!
Experimenting with it in your cuisine may be a lot of fun. Here are a few of my favorite ways to utilize it to get you started:
- In dips. In a white bean dip or hummus, blend a garlic clove. If you prefer a stronger garlic flavor, add one clove at a time until you reach your desired level of garlic flavor.
- In the form of mashed potatoes, Roasted garlic mashed potatoes are a crowd-pleaser. Make classic mashed potatoes, velvety cauliflower mash, or parsnip puree with it. (Although the last two aren’t potatoes, they’re still delicious.)
- In a pasta dish. Creamy butternut squash sauce and pumpkin pasta sauce both benefit from the addition of roasted garlic. It’s also delicious in butternut squash ravioli stuffing.
- In soups, for example. Roasted garlic can be added to your favorite creamy soups. Curried cauliflower soup, creamy cauliflower soup, and vegan tomato soup are all my favorites of mine.

- 1 whole garlic bulb
- Extra virgin olive oil, for drizzling

- Preheat the oven to 350 degrees Fahrenheit.
- Remove the top 14 inches of the garlic bulb.
- Place the garlic on a piece of foil, cut side up, and drizzle with olive oil and salt. To keep the garlic cut side up, I like to use a tiny baking dish or ramekin.
- Wrap the garlic cloves in foil and roast for 40 to 60 minutes, or until deep golden brown and soft.
- Use in any recipe that asks for roasted garlic, such as mashed potatoes or cauliflower mashed potatoes. It freezes well as well.
