With Asian or Mexican dishes, I adore serving this lime rice recipe as a light, bright side dish. And it makes a fantastic foundation for homemade burrito bowls!
Let me introduce you to cilantro lime rice because sometimes all you need is a simple, delectable side dish to finish off your summertime supper.
Simply add beans, veggies, salsa, and guacamole to this recipe for quick, weeknight burrito bowls; it couldn’t be simpler.
It also goes well with anything you’re grilling; serve it next to grilled veggie kabobs or next to avocados, perhaps with some chipotle sauce or lime dressing on top. You see what I mean. Here is the recipe!
MAKING CILANTRO LIME RICE: A RECIPE
This cilantro lime rice recipe is incredibly easy to make. There are simply a few further steps after boiling the rice:
- Rice should first be cooked on the stovetop or in a rice cooker (stovetop instructions are listed in the recipe below). My top recommendations for rice are long-grain white jasmine or basmati, but you can also use short-grain white or brown rice if that’s what you have in your cupboard. Whatever variety you choose, make sure to utilize the right water to rice ratio.
- When the rice is done cooking, combine it immediately in a hot dish with minced garlic, scallions, and lime zest.
- If you like your rice spicy, add jalapenos or red pepper flakes along with olive oil, sea salt, lime juice, cilantro, and a little bit of cooling time.
- You may use it as a side dish or as an ingredient in your preferred burrito bowl!
CILANTRO LIME RICE SERVING IDEAS
This green rice pairs particularly well with meals with Asian and Mexican influences thanks to its vibrant, fresh flavor.
Try stuffing it inside peppers like these little peppers or these poblanos, or serve it as a straightforward side dish with tacos or a protein of your choice! Any of the following bowl recipes would also be a wonderful place to start:
- Rice Bowl with Mango, Ginger, and Beans
- Rice in a Burrito Bowl with Cauliflower (use this recipe instead of cauliflower rice, or use half cauliflower rice and half regular rice)
- Bowl of loaded portobello burritos
- Alternatively, assemble your bowl using the rice, guacamole, black beans, your preferred vegetables, and salsa or chipotle sauce for drizzling.
- Scoop some hummus into a bowl, and top it with some green tahini sauce.

CILANTRO LIME RICE
This lime rice recipe is one of my favorites to serve as a light, a colorful side dish to Asian or Mexican dishes. The basis for handmade burrito bowls is also fantastic!

INGREDIENTS
- 1 cup long-grain jasmine rice, rinsed well and drained
- 1 1/2 cups water
- 3 teaspoons extra virgin olive oil, divided
- 1 small garlic clove, finely minced
- 2 scallions, finely chopped
- 1 teaspoon lime zest
- 1/4 to 1/2 teaspoon sea salt
- 1 1/2 tablespoons lime juice
- 1/2 cup finely chopped cilantro
- pinch of red pepper flakes or 1/4 diced jalapeño, optional
INSTRUCTIONS
- In a medium saucepan, mix 1 teaspoon of olive oil, rice, and water. Initially bring to a boil, then cover and simmer. twenty minutes of simmering (or check the time listed on the package of your rice).
- Remove the cover, fluff with a fork, then toss in the lime zest, scallions, and garlic. After one minute of cooling, add the remaining 2 teaspoons of olive oil, 1/4 teaspoon of salt, lime juice, cilantro, and red pepper flakes or jalapenos, if using. Combine ingredients, season to taste, and stir.
