You may always make this recipe without the rice in the packets and instead cook some fresh rice to offer on the side if you’d prefer.

Instead of rice, another delicious option is to serve this with noodles. Try substituting cauliflower rice for the traditional rice or noodles in this recipe to add a serving of vegetables.

Advice for Making the Pineapple Teriyaki Shrimp Foil Packets

  • Your foil should be at least 12″ by 18″. You will have enough foil left over to fully seal the packet with this.
  • Because the sweet sauce can adhere to the foil, spray the foil thoroughly with nonstick spray (or use nonstick foil).
  • Cooking should begin with the shrimp side down.
  • I’ve discovered that packed pre-cooked rice from this site produces the greatest results when cooking rice that is already packaged. If you’re using handmade rice, make sure it’s cold and about a minute undercooked so it doesn’t go mushy. Alternatively, you may prepare the rice and serve it separately.
  • For the greatest results, select a richer teriyaki sauce (or teriyaki baste).
  • For more flavor, mix in some fresh ginger and/or garlic with the vegetables.

Make sure to get a thick teriyaki sauce while making your selection. Many sauces are practically as thin as soy sauce, which will not produce the results you need! Don’t forget to give the foil packets a few minutes to rest once you take them off the grill.

Ingredients for Pineapple Teriyaki Shrimp Foil Packets

  • 20 ounces pineapple chunks 1 can be drained
  • 2 cups ready-to-serve rice or cold cooked
  • 2 large red bell peppers cut into 1 ½ inch pieces
  • 1 large green pepper cut into 1 ½ inch pieces
  • 3 cups sugar snap peas
  • 1 ½ cups teriyaki sauce divided
  • 1 clove garlic minced
  • 2 teaspoons fresh ginger grated
  • 1 pound shrimp peeled and deveined
  • 2 tablespoons olive oil
  • green onions and sesame seeds for garnish

  1. Heat the grill to 425 degrees Fahrenheit. Prepare 4 heavy-duty foil sheets (12 x 18 inches) and spray with cooking spray.
  2. The pineapple, red and green peppers, sugar snap peas, garlic, ginger, and 1 cup teriyaki sauce should all be combined in a big bowl. Evenly coat by tossing.
  3. Divide the rice, vegetable mixture, and shrimp equally among each foil sheet.
  4. Olive oil, salt, and pepper, followed by the remaining 1/2 cup teriyaki sauce, should be drizzled over the dish.
    Place the shrimp side down on a hot grill after tightly sealing each foil packet.
  5. Cook for 5 minutes, then turn it over and cook for 4 more minutes with the rice side down.
  6. Before serving, remove from the grill and let rest for a few minutes. Reverse the foil carefully, then top with sesame seeds and green onions.
  7. If desired, drizzle with more teriyaki sauce.

Notes

Make sure you get a rich teriyaki sauce. The best results in this recipe come from rice that is ready to be served.

If you’re using handmade rice, make sure it’s cold before adding it to the packets, or cook just the vegetables and shrimp as indicated and serve the rice separately.
