The “best” eggs are a question of personal preference, so don’t be fooled. You can make them more buttery or sour cream-laden, or you can make them plain as I do.

They remain excellent nonetheless, being fluffy and delicate. You’ll probably share my love for them.

RECIPE INGREDIENTS FOR SCRAMBLED EGGS

You will need the following 5 items to prepare this recipe for eggs:

  1. Of course eggs! Use the freshest ones you can locate, preferably from a local supplier (we like Vital Farms).
  2. Your scramble will be brighter, creamier, and more delicious the fresher your eggs are.
  3. I whisk some milk, plant milk, or water into the eggs before I cook them. The increased moisture adds to the eggs’ softness and creaminess. Choose plant milk with a neutral flavor if you decide to use it. I advise drinking almond milk without sugar.
  4. Butter or extra-virgin olive oil for the pan Since I usually have it on hand, I always use olive oil. However, butter also works nicely and will give this recipe a rich flavor.
  5. Pepper and salt both! to give these straightforward eggs a depth of flavor.

So now you have everything you need. Cooking is now required! Here is my simple recipe for eggs:

Beat the eggs first. They should be blended completely by whisking them together in a medium dish with the yolk and whites.

Whisk one more after adding the milk or water. The beaten eggs ought to be a uniform shade of golden without any transparent specks or streaks.

After that, lightly heat the pan. Melt some butter in it or brush some olive oil inside a small nonstick skillet. The skillet is warmed over medium heat.

  1. In a medium bowl, crack the eggs and whisk in the milk or water. Make sure there are no lingering egg white streaks and that the mixture is smooth and blended.
  2. Melt some butter in a small nonstick skillet or brush some olive oil on it. Bring to medium heat.
  3. The eggs should be added and let to cook for a short while without being stirred. To create broad, supple curds of eggs, drag a rubber spatula across the pan’s bottom.
  4. Cook the eggs over medium-low heat, folding and stirring them every few seconds. To produce additional curds and stop any portion of the eggs from drying out, frequently scrape the spatula along the bottom and edges of the pan.
  5. When the eggs are mostly set but still have some liquid in them, remove the pan from the heat. If desired, add freshly chopped chives as a garnish after seasoning with salt and pepper to suit.
