Corn salad is SO SIMPLE! One of the tastiest salads, packed with juicy, sweet corn, luscious tomatoes, creamy avocado chunks, and red onion slices, can be made with just a few fresh ingredients. For you, we’ve made this flexible:

  • CORN: Use fresh OR canned in this recipe. We prefer fresh corn boiled in milk for plump, juicy corn kernels.
  • TOMATOES: Grape tomatoes have an amazing flavor, bursting with tomato juice. Use cherry or Roma in their place if you prefer.
  • ONION: Red onion is great but green onion slices or chives will also work.

What Goes Into A Delicious Salad?

  • 1 cup of shredded Romaine or Cos lettuce
  • 2 ears of cooked corn, (shucked and sliced off the cob) — or 14 ounces can of corn kernels, drained
  • Two large, ripe avocados, cut in half, peeled, stoned, and chopped.
  • 9 ounces (250 g) of halved grape tomatoes
  • 1/8 of a finely sliced red onion


  • 2 teaspoons of lime juice, fresh
  • 2 tbsp olive oil
  • 1-2 teaspoons of freshly cut cilantro (or parsley)
  • Season with 1/2 teaspoon of salt.
  • 13 teaspoon dried red chili flakes
  • An ounce of cumin
  • 1 minced garlic clove (optional)


  1. All the salad components should be combined.
  2. The dressing ingredients should be thoroughly combined in a small jug before being poured over the avocado salad. If needed, add more salt to the dish. Enjoy with tacos, fajitas, or any other protein-containing dish.
