A tasty way to savor all of the summertime zucchini from your yard—or your considerate neighbor or coworker—is to make crispy fried zucchini. Using a parmesan breadcrumb mixture, zucchini is cut into medallions and fried till crispy.

Making Fried Zucchini
The simple part is now! By doubling the recipe, you may make as much as you have zucchini for. Oh, and consider giving some away as well.
You are welcome to use pre-packaged and pre-seasoned panko to prepare them. Alternately, prepare them yourself using the instructions below and breadcrumbs. Easy as pie!
Trim the zucchini’s ends after washing and drying them. Each zucchini should be cut into 12″ medallions.
Prepare the breadcrumb mixture and the egg mixture (per the recipe below).
Flour the zucchini, then dredge it in the egg mixture before evenly coating it with bread crumbs. To ensure that they are completely covered, press down on them. Repeat with the rest of the slices.
Cooking Fried Zucchini
There are several different techniques for frying zucchini. You can either fry it in an oil-filled skillet, or in an air fryer, or you can bake it in the oven instead of frying it. They’ll come out crispy, crunchy, and delectable no matter how you prepare them!
In a frying pan, heat the oil and add the breaded zucchini. Cook for 2 to 3 minutes on each side, or until the coating is crisp and golden brown.
When using an air fryer, preheat it to 375°F. Cook the zucchini slices for 8 minutes, or until they are crispy and golden brown.
Oven-Fried: Simply arrange the coins in a single layer on a baking sheet covered with parchment paper and spray with cooking spray if cooked in the oven without oil. Bake in a 400°F-preheated oven for 18 to 20 minutes.
Ingredients for Fried Zucchini
- 2 medium zucchini about 1 ½ lb
- 2 eggs
- ¾ cup all-purpose flour
- ½ cup grated parmesan cheese.
- 2 cups seasoned bread crumbs
- canola oil for frying
Instructions
- Serve hot with a variety of dipping sauces after draining on paper towels. Try serving them with your favorite dipping sauce, a fiery chipotle mayo, or a buttermilk ranch dip!

- Add salt and pepper to taste when beating eggs. In another dish, mix the bread crumbs, parmesan cheese, and salt and pepper to taste.
- Fill a pan with oil until it is 12 full “over medium heat, deep, and warm.
- Place zucchini in flour, then in beaten eggs, and then in bread crumbs. Repeat with the rest of the slices.
- Don’t crowd the pan when you add the zucchini; cook each side for 2-3 minutes.
- On paper towels, drain. Adding salt is optional.

Alternative Techniques for Cooking
Preheat the air fryer to 375 degrees Fahrenheit. Cook for 8 minutes, stirring once, or until crispy and golden brown.
Cooking in the oven requires a 400°F oven. Spray with cooking spray and arrange in a single layer on a baking sheet lined with parchment paper. Until crispy or golden brown, bake for 18 to 20 minutes.
Make sure the bread crumbs you use are seasoned. Make sure to season your breadcrumbs if they are plain before adding them to the parmesan cheese.
Add the following ingredients to 2 cups of regular bread crumbs to make seasoned bread crumbs:
1 teaspoon of powdered garlic
One-half teaspoon of onion powder
1 teaspoon of flakes of dried parsley
a half-teaspoon of dried oregano
A half-teaspoon of dried basil
