These tiny sandwiches have existed for as long as I can recall. Sandwich made with crustless bread, dill and chive cream cheese, and paper-thin cucumbers.
For every occasion, these quick cucumber sandwiches are the ideal appetizer. Everyone adores them since they are light and refreshing!
How to Prepare Cucumber Subs?
Making cucumber sandwiches is quite simple. Fresh herbs, cream cheese, and mayonnaise are my first ingredients. You can substitute your preferred ingredients or whatever you have on hand for the dill and chives that I use.
In the absence of fresh herbs, you can use dried herbs instead. You can also omit the mayonnaise and herbs altogether and just add ranch dressing (or homemade ranch dressing mix) in their place.
After the spread has been thoroughly combined, slice your cucumbers very thinly. Because the seeds are small and delicate, English cucumbers are my favorite for this recipe.
Although they can be peeled, I like peel-on for the color. For taste, I sprinkle some additional herbs and pepper over top.
The white bread with the crusts removed is what we use for these, but you can make cucumber sandwiches with any type of bread (including pumpernickel) if you’d like!
Up to 24 hours in advance, you can prepare this recipe for cucumber sandwiches.
They won’t go soggy if the bread is completely covered in the dill cream cheese spread. Place the prepared, sliced food in a container, and tightly seal it.
Place in the fridge to store. Before serving, I like to let them sit at room temperature for about 20 minutes.
Using flavored cream cheese (such as vegetable cream cheese or herb and garlic) can make these extra quick if you’re in a hurry!
Ingredients
- 8 ounces of cream cheese softened
- 3 tablespoons mayonnaise
- 2 teaspoons fresh dill chopped
- 1 teaspoon fresh chives chopped
- ¼ teaspoon garlic powder
- salt & pepper to taste
- 1 long English cucumber thinly sliced
- 1 loaf of sliced bread crust removed
Instructions
- Cream cheese and mayonnaise should be blended completely in a small basin using a hand mixer. Garlic powder, herbs, and salt and pepper to taste should be combined.
- The cream cheese mixture should be spread on toast slices.
- Slice cucumbers very thinly. Place half of the bread slices on top. If desired, put more herbs on top.
- Slice each sandwich into three pieces, top with the final piece of bread, and optionally remove the crusts.
- Serve right away or cover and refrigerate for up to 24 hours.
