A classic salad that is light, chilly, and oh-so-refreshing is cucumber and tomato salad.

Sliced cucumbers, juicy tomatoes, slivers of red onion, and a tangy vinaigrette dressing are the main ingredients in this simple salad.

I know it’s time to prepare a large bowl of cucumber tomato salad when the farmer’s markets begin to overflow with luscious, garden-fresh vegetables.

  • Mix all of the dressing’s components (per the recipe below).
  • All vegetables should be thinly sliced and dressed.

I adore combining dried oregano and fresh basil in this salad to enhance its Mediterranean flavor. Freshly chopped parsley and/or dill produce similarly good herbal notes.

It’s best to use English cucumber for this recipe. There is no need to remove the skins because they are delicate, and there are hardly any seeds.

Even if all you have are standard salad cukes, you can still use those. Simply peel them, and if the seeds seem difficult to remove, scoop them out before slicing.

Cucumber Tomato Salad dressing

Since a simple dressing allows the flavor of the vegetables to show and keeps the salad light and fresh, this salad doesn’t need much.

Salt and pepper with a dash of vinegar and some olive oil. Red wine vinegar is what I typically use, but you may use any favorite (infused oils and vinegar are great here too).

Can I move forward?

This salad can be prepared in advance and is delicious cold. Of course, it tastes best when prepared the day before serving, but you may store it for a few days if you drain the fluids.

I prepare the tomato-cucumber salad to a certain extent whenever I’m preparing this dish and need to start dinner early.

  1. Mix the wine vinegar, olive oil, herbs, salt, and pepper in the bowl you’ll be using to prepare the salad.
  2. The onion is sliced after being peeled and added to the vinaigrette.
  3. Before serving, cover and chill for up to a day.

The onions will continue to be crisp while assisting the dressing to flavor and mellow. Simply cut the cucumbers and tomatoes into slices, combine with the onion and vinaigrette, and chill slightly before serving to construct the salad.

Additional Fun Additions

By using this recipe as a starting point, you can have a lot of fun. Add additional layers of healthy and delectable ingredients like feta cheese crumbles, mozzarella balls, slices of avocado, and sliced fennel bulb.

Ingredients for Cucumber Tomato Salad

  • 1 long English cucumber sliced
  • 2-3 large tomatoes diced
  • ½ red onion sliced
  • 1 tablespoon fresh herbs parsley, basil, and/or dill, optional
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • salt & pepper to taste

  1. In a bowl, combine all the ingredients and toss well.
  2. At least 20 minutes before serving, chill.
