A Simple and Quick Soup Recipe
Ground beef tacos and hearty soup are two of my favorite things, and this simple taco soup recipe combines the two! For many soups, including Easy Hamburger Soup and Cabbage Roll Soup, ground beef is an affordable option.
It has a similar hearty, healthful deliciousness to chili, but the flavor is taco-inspired!

Ingredients
Lean ground beef is our preferred option, but you can also use ground turkey or chopped or ground chicken in its place.
Frozen corn provides nutrients and heft to the soup. Can also work. Bell peppers are added for taste. Add any vegetables you enjoy or have on hand.
This meal is quick and simple thanks to pantry ingredients.
Beans from cans can be added quickly; just remember to drain and rinse them first. Pinto or black beans are my favorites, but feel free to add any sort.
I purchase a tiny 4-ounce can of green chiles and have a few in the pantry because they are light yet have a lot of flavors. Tomato sauce and Rotel tomatoes offer zesty flavor and a little fire.
Spices are easy to use. Although a package of store-bought taco seasoning works just as well, homemade taco seasoning is a favorite for this recipe.
Variations
Add more to adjust the seasoning to your taste. Try cumin, paprika, onion powder, garlic powder, chili powder, and any other spices you enjoy.
Add more jalapenos or a few dashes of hot sauce to make it spicier.
Recipe for Taco Soup
The ideal weekday supper (and a fantastic way to use up leftover taco meat) is this Taco Soup recipe, which is prepared on the stovetop and simmers for roughly 15 minutes.
- In a soup pot, brown ground meat together with onion. Remove any fat.

- Simmer for 15 to 20 minutes at medium heat. If desired, add a squeeze of lime and some cilantro after seasoning with salt and pepper.
For the ideal supper, top it with your preferred taco toppings, such as sour cream, homemade salsa, pico de gallo, and some cheddar.

With tortilla chips, tortillas, cheese, and a bun or slice of bread, taco soup can be prepared.
Allow everyone to adorn their own bowls by setting out a tray of toppings! Avocado, green onions, jalapenos, tomatoes, cilantro, and salsa are a few of my favorite toppings.
Have Extras?
This will keep for a few days in the fridge. This soup freezes beautifully if you intend to keep it for a longer period of time!
FROZEN: In a big saucepan, cook ground beef and onion until no pink is visible. Get rid of any extra fat.
Ingredients
- 1 pound of ground beef
- 1 onion diced
- 16 ounces of pinto beans drained and rinsed
- 10 ounces Rotel tomatoes
- 8 ounces tomato sauce
- 4 ounces green chile peppers diced
- 2 cups beef broth
- ¾ cup frozen corn
- ⅓ cup green pepper diced (or ½ small green pepper)
- 1 package taco seasoning mix or homemade
Instructions
- Cook ground beef and onion in a big pot until no pink is visible. Get rid of any extra fat.

For up to three days, keep leftovers in the refrigerator in an airtight container. On the stovetop, reheat.
