I adore being able to take frozen chicken breasts, throw them in the Instant Pot, and have a meal ready in a matter of minutes. It’s not just nutritious, but also incredibly tasty and tender.

When I’m gone all day and want to come home to a supper that’s ready to go, cooking chicken in the slow cooker is ideal, but the Instant Pot quickly thaws food from frozen.

I mean, I TRY to plan my meals, but occasionally it’s 5 o’clock and I haven’t even considered what to eat (please tell me I’m not the only one)!

This dish calls for cooking both fresh and frozen chicken for 12 and 16 minutes, respectively. Do you now understand why I want to refer to it as the Miracle Pot?

There are only 4 components needed to get started. There are only four ingredients: chicken breast, salsa, chicken broth, and taco seasoning (I like to make my own). When the chicken is finished cooking, you just shred it, and your meal is done!

Hard shells and traditional taco ingredients are ideal, but I also enjoy using soft tortillas or even serving this over a bed of lettuce for the ideal taco salad!

A large tray of toppings, including sour cream, homemade salsa, lettuce, tomatoes, and guacamole, was laid out. pretty much anything you desire! Play around a little to see what you can make with your toppings!

Ingredients

  • 3 boneless skinless chicken breasts fresh or frozen
  • 2 tablespoons taco seasoning store-bought or homemade
  •  cup chicken broth
  • 1 cup salsa

For serving

  • taco shells or tortillas
  • cheese
  • lettuce
  • tomatoes

Instructions

  1. Chicken breast should be put in the Instant Pot’s base. Including chicken broth
  2. Chicken breasts are seasoned with taco seasoning. Add salsa on top.
  3. Press “Poultry” and cook for 12 minutes for fresh poultry or 15 minutes for frozen poultry.
  4. Release the pressure after finishing, then shred the chicken with two forks. In the Instant Pot, combine with the sauce and serve as desired.

Notes

Taco shells and toppings are not included in the nutritional facts. If your chicken breasts are smaller than average, you should shorten the cooking time by roughly 2-3 minutes.
