Ingredients For Onions With Cream Sauce
- 1 pound pearl onion root ends trimmed
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 1 ½ cups light cream
- 2 tablespoons dry sherry optional
- 2 tablespoons parmesan
- 1 teaspoon salt
- pinch ground black pepper to taste
- 2 tablespoons fresh parsley chopped
Instructions
- In a big pot, cover onions with salted water and bring to a boil. Reduce heat to medium-low and cook for 10 minutes, or until vegetables are soft.
- Drain the onions and place them in an ice bath with a slotted spoon.
- In a large skillet over medium heat, melt the butter. For about 5 minutes, cook and mix flour into melted butter. Salt and pepper to taste.
- Toss the flour mixture with the cream. Cook and stir for 5 minutes, or until thick and bubbly. In a mixing bowl, combine the cream sauce, onions, sherry (if using), parmesan, and parsley.
- Cook for 2 to 3 minutes, or until thoroughly heated. In a baking or serving dish, add the onions.
