Take advantage of these nutritious overnight oats with blueberry chia jam to improve your overnight oats!

Lemon, maple syrup, cinnamon, chia, oats, and blueberries are the only ingredients required for making these overnight oats with blueberry chai jam.

Making these DELICIOUS overnight oats to top several bowls of overnight oats was the first thing I did with my market haul of blueberries.

This breakfast combination is so good, I don’t know why I haven’t been preparing it all summer. We’ve been eating overnight oats with this blueberry jam all week.

Since they don’t require cooking, overnight oats are incredibly simple to make if you’re new to them (hey, I kind of am too). Oats and milk are combined in a ratio of 1:1.

(I use vanilla almond milk). They supply overnight and are prepared for you in the morning. A terrific breakfast option for on-the-go, overnight oats can serve as a blank canvas for your favorite toppings, fruits, etc.

The ideal way to use up all of my leftover blueberries was to make this Blueberry Lemon Overnight Oats dish and use my homemade fresh blueberry chia jam as a topping.

Layer your jars with oats, almond milk, chia jam, additional blueberries, and lemon zest once your jam is finished and has set (let it sit in the fridge for at least an hour). Place it in the refrigerator, then enjoy your oats for breakfast the following morning!

I should add that I also enjoy adding some toasted, sliced almonds to the top of mine (add a pinch of sea salt while you toast them). I add extra maple syrup if I have a sweet tooth when I wake up.

INGREDIENTS

for the jam: (makes about 2 cups)

  • 3 cups blueberries
  • 2 tablespoons maple syrup
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon vanilla extract and ground cinnamon
  • 3 tablespoons chia seeds
  • pinch of sea salt

for the oats: (amount for 1 serving)

  • 1/2 cup Quaker old-fashioned oats, vanilla almond milk, and lemon zest
  • 1 tablespoon blueberry chia jam
  • 1/4 cup blueberries

INSTRUCTIONS FOR MAKING OVERNIGHT OATS WITH BLUEBERRY CHIA JAM

  1. Produce the jam. Simmer blueberries, lemon juice, and vanilla in a medium saucepan over medium heat for 3 to 5 minutes, gently crushing the berries as they cook. Remove the pan from the heat and stir in the salt, cinnamon, and maple syrup. Transfer to a glass jar after adding the chia seeds. Allow to gently cool before placing in the refrigerator to chill for at least an hour. Add extra chia seeds to your jam if it isn’t sufficiently set.
  2. Put together the oats. In a glass jar, layer Quaker Oats, milk, blueberry jam, blueberries, and lemon zest.
  3. Enjoy in the morning after being chilled overnight.

NOTES

Optional additions include sliced, lightly salted, toasted almonds for crunch and an additional drizzle of maple syrup if you prefer your oats to be sweeter.
