Ingredients
- ½ cup butter unsalted
- 8 ounces white mushrooms sliced
- 1 small yellow onion diced
- ½ teaspoon garlic powder
- ½ teaspoon black pepper
- 2 cups chicken stock
- ½ teaspoon Kosher salt
- ½ cup flour
- 1 cup half and half
- 1 cup petite frozen peas
- ½ cup pimentos drained and chopped
- 3 cups rotisserie chicken shredded
Instructions
- Butter is added to a 12-inch high-sided skillet and heated to medium-high.
- After the butter has melted, sauté the mushrooms and onions for about 5 minutes, or until they begin to soften.
- Add kosher salt, black pepper, and garlic powder for seasoning.
- Add the flour and mix to combine until paste forms.
- Slowly pour the half-and-half and chicken stock while stirring. Make sure there are no flour pieces left by stirring.
- Turn the heat down to low and whisk the sauce for about 5 minutes, or until it has thickened.
- Add the rotisserie chicken, peas, and chopped pimentos after stirring.
- Serve with biscuits, rice, or spaghetti.
