  • ½ cup butter unsalted
  • 8 ounces white mushrooms sliced
  • 1 small yellow onion diced
  • ½ teaspoon garlic powder
  • ½ teaspoon black pepper
  • 2 cups chicken stock
  • ½ teaspoon Kosher salt
  • ½ cup flour
  • 1 cup half and half
  • 1 cup petite frozen peas
  • ½ cup pimentos drained and chopped
  • 3 cups rotisserie chicken shredded

  1. Butter is added to a 12-inch high-sided skillet and heated to medium-high.
  2. After the butter has melted, sauté the mushrooms and onions for about 5 minutes, or until they begin to soften.
  3. Add kosher salt, black pepper, and garlic powder for seasoning.
  4. Add the flour and mix to combine until paste forms.
  5. Slowly pour the half-and-half and chicken stock while stirring. Make sure there are no flour pieces left by stirring.
  6. Turn the heat down to low and whisk the sauce for about 5 minutes, or until it has thickened.
  7. Add the rotisserie chicken, peas, and chopped pimentos after stirring.
