  • 2 large carrots peeled and finely diced

  • ¼ teaspoon pepper
  • 2 chicken breasts boneless skinless
  • 1 cup frozen peas
  • 2 cups instant brown rice
  • ⅓ cup milk
  • 2 cups mozzarella cheese shredded

  1. Stir the broth, carrots, onions, red peppers, Italian seasoning, garlic, salt, and pepper in a 3- to 4-quart crockpot.
  2. Chicken breasts should be added, covered, and cooked for two hours on high or four hours on low.
  3. Remove and set the cooked chicken on a chopping board.
  4. Rice and peas are stirred into the crockpot before being covered and heated on high for 15 minutes.
  5. Slice the chicken thinly after it is cool enough to handle.
  6. Stir the chicken, milk, and cheese into the crockpot after 15 minutes. Once the cheese has melted and the rice is soft, simmer on high for 15 more minutes with the cover on.
