  1. Stir the broth, carrots, onions, red peppers, Italian seasoning, garlic, salt, and pepper in a 3- to 4-quart crockpot.
  2. Chicken breasts should be added, covered, and cooked for two hours on high or four hours on low.
  3. Remove and set the cooked chicken on a chopping board.
  4. Rice and peas are stirred into the crockpot before being covered and heated on high for 15 minutes.
