This fried cabbage recipe’s simplicity and versatility make it a wonderful culinary choice. When I was a child, my Polish grandmother always served cabbage dishes like soups and rolls.

CABBAGE: Just a plain head of cabbage will do. Any type of cabbage, even red cabbage, can be used to make a vibrant side dish.

BACON: Bacon gives food a salty, smoky flavor, and the fat is excellent for cooking vegetables like onions and cabbage. You can use ham or even leftover corned beef if you don’t have bacon.

You will need to substitute the bacon grease with more butter or oil if you’re using reduced-fat bacon (such as turkey bacon or vegan bacon).

OPTIONS: You can choose to include a few garlic cloves. Add a squeeze of lemon, some apple cider vinegar, or some parmesan cheese to finish.

Cabbage pairs nicely as a hot side dish with other comfort food entrees like oven-fried chicken or these simple glazed ham steaks.

Keeping Remainders

For up to 4 days, store bacon and cabbage in a covered container. For up to 4 weeks, freeze portions in quart-sized zipped bags with the date written on the outside.

Even though the mixture of cabbage is going to be limp, add additional fresh cabbage and reheat it in a skillet. Alternately, include leftover bacon and cabbage in beef and stir-fry. Or include it in a stew or soup!

  • 1 small onion diced
  • 6 cups cabbage core removed and chopped into 1-inch pieces
  • ¼ teaspoon red pepper flakes or to taste, optional
  • salt and pepper to taste

  1. Cook bacon until crisp over medium heat. Using a slotted spoon, remove and set aside (leave the drippings in the pan).
  2. Cook the onion in the bacon drippings until it is soft.
  3. Add the chopped cabbage and simmer for 15 to 20 minutes, or until soft.
  4. To taste, add salt, pepper, and chili flakes. Add the bacon and then serve.

Notes

cabbage into 2-inch long strips, each measuring 1 inch. Although thin, cole slaw mix can be used and cooks quickly (8–10 minutes).

Two minced cloves of garlic, parmesan cheese, a squeeze of lemon juice, or a splash of apple cider vinegar are optional additions.
