For up to 4 days, store bacon and cabbage in a covered container. For up to 4 weeks, freeze portions in quart-sized zipped bags with the date written on the outside.
Even though the mixture of cabbage is going to be limp, add additional fresh cabbage and reheat it in a skillet. Alternately, include leftover bacon and cabbage in beef and stir-fry. Or include it in a stew or soup!

- 6 slices of bacon chopped
- 1 small onion diced
- 6 cups cabbage core removed and chopped into 1-inch pieces
- ¼ teaspoon red pepper flakes or to taste, optional

- Cook bacon until crisp over medium heat. Using a slotted spoon, remove and set aside (leave the drippings in the pan).
- Cook the onion in the bacon drippings until it is soft.
- Add the chopped cabbage and simmer for 15 to 20 minutes, or until soft.
- To taste, add salt, pepper, and chili flakes. Add the bacon and then serve.
