For the ideal supper, we pair this simple hamburger soup with a crisp green salad and some crusty bread.

Although we’ve always called this “hamburger soup,” I’m sure you guys have plenty of other names for it. Just a few examples include bachelor’s stew, poor man’s soup, hangover soup, and soup.

Whatever you decide to call it, you should make it!

Making Hamburger Soup

There is ground meat, crisp potatoes, and veggies in a hearty tomato broth. The tastiest meals have occasionally been made using the most basic ingredients.

Not only is this soup tasty, but you probably already have the ingredients on hand.

I begin with a blend of browned and drained lean meat, onion, and garlic. Any type of ground meat, including ground turkey, may be used in this dish.

The finest broth to add taste is beef broth, however, I like the low-sodium type.

Vegetable and Hamburger Soup

This is made simple (no chopping, no preparation) by using a variety of frozen vegetables, but it’s also a fantastic way to use up any leftover vegetables in your fridge.

Almost everything can be used, and occasionally we even use cabbage! Celery, carrots, peas, beans, and zucchini are all OK!

Since we always had potatoes in our Soup growing up, that is how it is in this rendition. You can substitute any sort of pasta for the potatoes in this recipe if you don’t have any on hand or simply prefer it.

I increase the amount of broth (or water) by 1 cup and cook the noodles for one more minute. To transform this into a tasty and hearty macaroni beef soup, our favorites are macaroni, shells, and rotini!

What to accompany hamburger soup with

I make a quick chopped salad and slice up a loaf of french bread (nearly always served with Homemade Garlic Butter) while the soup simmers to complete the meal.

If you’re fortunate enough to have any leftovers, this soup freezes beautifully and reheats well for weekday lunches.

I place a freezer bag on top of my little baggie holder and put one serving into each baggie.

I take it out of the freezer the night before or in the morning when I need a quick lunch and microwave it for a delicious dinner. (And occasionally, just before serving, sprinkle on some cheese).

This has always been a family favorite.

Everyone who tries it gives it wonderful reviews. It’s quick and simple to make, reheats well, and is adaptable. The ideal soup.

This soup makes a great gift as well.

This soup should be delivered to anyone you know who has recently had a baby, undergone surgery, or is simply experiencing a particularly hectic week with their children.

For the ideal meal, serve 30 Minute Dinner Rolls on the side.

With that salad and bread, it will last for a few days and can easily feed a crowd.

Ingredients

  • 1 pound lean ground beef
  • 1 onion diced
  • 2 cloves garlic minced
  • 2 medium potatoes peeled and diced
  • 3 ½ cups beef broth
  • 28 ounces diced tomatoes with juice
  • 1 can condensed tomato soup
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • 1 bay leaf
  • salt and pepper to taste
  • 3 cups mixed vegetables fresh or frozen

  1. Garlic, onion, and ground beef are browned until no pink is visible. Remove any fat.
  2. Add the potatoes, stock, tomato soup, Worcestershire sauce, spices, and bay leaves. 10 minutes of covered simmering.
  3. Add the vegetables after stirring. Cook potatoes for 15 to 20 minutes, or until they are soft.
