This is one of our favorite ways to enjoy Marinated Tomatoes if you have a harvest of deliciously juicy ones from your garden or farmer’s market (or discover the ideal tomatoes at the grocery store)!

When used to produce a substantial sauce recipe or when added to a sandwich or wrap, fresh tomatoes can make all the difference.

Garden-fresh tomatoes should be combined with a zingy vinaigrette-style dressing, and the flavors should mingle in the refrigerator. This dish is quite simple.

We adore marinated tomatoes because they create an excellent salad and give flavor to anything from sandwiches to hamburgers! Include your personal favorites, such as cheeses and cucumber slices.

Variations and Ingredients

The ingredients improve the taste of ripe, fresh tomatoes!

Tomatoes can be used in this dish in a variety of ways, including beefsteak, Roma, cherry, and even heirloom varieties (think red, yellow, or even green).

VINEGAR & OIL Use high-quality olive oil if you can. Our favorite red wine vinegar and tomato combination is in bruschetta! However, you are welcome to substitute balsamic vinegar for a stronger flavor or champagne vinegar for somewhat sweeter-tasting marinated tomatoes.

HERBS Basil and parsley are two fresh herbs that really enhance this recipe. Dried is certainly effective, but we prefer fresh.

ONIONS Our preferred kind for this recipe is sweet white onions (with the white papery peel, not the yellow skin). Onions should be briefly soaked in cold, salted water to remove any “bite” before being added. This is not required.

Making Marinated Tomatoes

Tomatoes with a marinade are simple as 1-2-3!

  1. Wash and dry tomatoes with a towel. 14″ thick slices of tomato.
  2. In a bowl with a cover or a zippered bag, combine the remaining ingredients.
  3. Place the tomatoes in the marinade, making sure they are completely submerged or covered and chill for at least two hours or up to two days in the refrigerator.

Tips

  • Although it is simpler to slice larger tomatoes, even cherry tomatoes cut in half make an attractive appearance.
  • Cherry tomatoes should be sliced after being placed on a platter and covered with another plate (upside down over the cherry tomatoes). Slice between the two plates from left to right using a long knife (or opposite). All of the cherry tomatoes will be cut into slices at once. Easy as pie!
  • Tomatoes that have been marinated will keep in the fridge for about 3 days before they start to grow soft, but they will definitely be consumed by then!
  • Add the leftovers’ marinade-drained marinade to salads, soups, stews, and chili.

Ingredients

  • 1 pound ripe tomatoes
  • ½ white onion sliced
  • ¼ cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 clove of garlic sliced
  • 1 teaspoon fresh parsley
  • ½ teaspoon salt or to taste
  • 1 teaspoon fresh basil
  • ½ teaspoon black pepper

  1. Slice tomatoes 1/4″ thick after washing.
  2. Pour the remaining ingredients into a freezer bag or small bowl, then add tomatoes.
  3. Marinate for a minimum of two hours and a maximum of two days, turning occasionally. Before serving, remove the garlic.

Notes

Tomatoes that have been marinated can be kept in the refrigerator for up to 3 days in an airtight container.

Before serving, stir and reseason with salt and pepper.
