I’ve been using canned beans a lot lately.
They’re quick and easy to prepare. They’re a cheap method to fill my stomach as supermarket prices continue to rise.
I cooked this quick Lemony White Bean Salad for meal prep the other day, and it was too tasty to keep to myself. By adding a few extra ingredients, it can be served as a side dish or a whole meal.
WHITE BEANS SALAD CONSISTS OF
Simple food appeals to me, and this bean salad is a perfect example. White beans, finely sliced red onion, parsley, and a quickly prepared lemon vinaigrette are all that is required. Quick, easy, delectable, and FRESH.
WHAT WHITE BEANS ARE THE BEST?
You want a bean that is pretty large and firm for this salad so it doesn’t break apart when mixed together. Cannellini beans are used. Butter beans can also work. For this meal, I would avoid using navy or great northern beans.
SALAD WITH WHITE BEANS CAN BE SERVED WITH
I served this salad with Garlic Marinated Chicken and a couple of pita triangles as part of my weekly meal prep. It’d also be delicious with Mediterranean Turkey Burgers, Baked Cod, Chimichurri Chicken Kebabs, or a Hummus Lunch Box.
CAN I ADD ANYTHING ELSE?
Because this dish is so basic and straightforward, there are numerous ways to jazz it up and transform it into something unique!
So look through your fridge and cupboard for any ingredients that need to be used up, because you can probably use them in this salad! Here are some suggestions:
- Fresh or sun-dried tomatoes
- Crumbled feta
- Fresh spinach
- Any fresh herbs (scallions, chives, basil, tarragon, cilantro, rosemary)
- Cucumbers
- Sautéed kale
- Tuna
- Grilled chicken
- Thinly sliced radishes
- Diced avocado
LEMONY WHITE BEAN SALAD
INGREDIENTS
- 2 Tbsp. olive oil ($0.32)
- 1 Tbsp. lemon juice ($0.04)
- 1/2 Tbsp. red wine vinegar ($0.05)
- 1 tsp Dijon mustard ($0.06)
- 1 clove of garlic, minced ($0.08)
- 1/8 tsp salt ($0.01)
- 1/8 tsp freshly cracked black pepper ($0.01)
- 2 15oz. cans Cannellini beans ($1.78)
- 1/4 red onion, thinly sliced ($0.08)
- 2 Tbsp. chopped fresh parsley ($0.10)
INSTRUCTIONS
- Begin by preparing the vinaigrette. Combine the olive oil, lemon juice, red wine vinegar, Dijon, garlic, salt, and pepper in a mixing bowl.
- Cannellini beans should be rinsed and drained before cooking. Red onion, thinly sliced; parsley, coarsely chopped
- Pour the vinaigrette over the beans, onions, and parsley. To combine everything, whisk it together. Taste and season to taste.

STEP-BY-STEP INSTRUCTIONS FOR MAKING LEMONY WHITE BEAN SALAD
- Make the Lemon Vinaigrette first, so the flavors may mingle for a few minutes. 2 tablespoons olive oil, 1 tablespoon lemon juice, 1/2 tablespoons red wine vinegar, 1 tablespoon Dijon mustard, 1 garlic clove minced, 1/8 tablespoons salt, and 1/8 tablespoons freshly cracked pepper.
- Cannellini beans, rinsed and drained.
- 1/4 red onion, thinly sliced; 2 tablespoons parsley, roughly chopped In a mixing dish, combine the beans, onions, and parsley, then drizzle with the vinaigrette.
- Combine the ingredients and stir well. Adjust the salt or pepper to taste.
- Start by making the vinaigrette. In a mixing bowl, whisk together the olive oil, lemon juice, red wine vinegar, Dijon, garlic, salt, and pepper. Before cooking, rinse and drain cannellini beans. red onion, thinly sliced; roughly chopped parsley.
- Over the beans, onions, and parsley, pour the vinaigrette. Whisk everything together. Season to taste.
